When I was young, I did not eat zucchini very much, but over the years I have grown to love this vegetable and enjoy finding new recipe ideas and new ways to cook it up. Here are a few recipes that I really like and think you might enjoy giving a try in your kitchen. I grow my own during the summer months so I can grow them really large to use as a giant shell for my taco meat.
Crunchy Zucchini Rounds With Sun-Dried Tomatoes and Goat Cheese – These look so appetizing and colorful, I love these bite sized appetizers. Really simple to make with a slice of zucchini, sun dried tomatoes, goat cheese, salt and pepper with some chives sprinkled on top. These are sure to be a hit for any occasion and why not consider these for your next family gathering or pot luck. People will think that you slaved over the in the kitchen while it really takes a little preparation and then it’s simply assembling them.
Zucchini Fries -Spaghetti is something I can eat almost any time and recently I have started to buy the whole wheat versions or even the ones made from vegetables. You can use any type of spaghetti noodle that you like when making this dish, they all will cook up just fine. With the added chipoltle chilies in adobo sauce, you can count on a bit of a kick when eating this. I like to include a couple extra garlic cloves, my husband and I can’t get enough of this in our recipes and once again the addition of the Parmesan cheese give it a nice touch.
Tomato-Zucchini Bake – It’s great to combine other summer vegetables with your zucchini and this recipe is perfect allowing you to do just that. Full of color and lots of crunch without the added oil from frying, this baked dish is definitely worth a try. Tomatoes, corn, zucchini along with the panko crumbs and Parmesan cheese, this is a very easy dish to prepare. I like to make extra of this dish so I can have left overs to enjoy the next day, I even find them delicious cold.

This recipe includes cottage cheese along with the usual mozzarella and Parmesan and to make things easier, it calls for no-bake noodles. Make yourself a nice side salad, maybe some fresh fruit during the summer months and you have yourself one delicious meal. If your meat eater throw much of a fit at the idea of a meatless lasagna, you can always add your choice of meat to this dish, you may need to increase the cheeses a bit to compensate for the extra bulk.
