I have slowly been trying to change my eating habits for the better, which has been a chore. I have been trying to eat more vegetables. However, with my busy schedule there are just some days that I just do not have time to sit and eat a proper serving of vegetables. Without prior preparation, I tend to grab the first non-healthy item that I see. For this reason, I look for quick alternatives; one that I have come up with is to make vegetable juices up in my spare time and store in the refrigerator. I do not keep the juice for more than two days. I want to make certain that the drinks are as fresh as possible. I also store the juices in proper containers. By grabbing a quick glass of vegetable juice that is prior made I will not only be able to stay on goal but I also know what ingredients are in my drink.
Tomato-Veggie Juice
Ingredients:
2 c. romaine (chopped)
½ c. chopped chives (fresh)
4 large tomatoes which should be quartered
¼ fresh jalapeno (this can be omitted, I do not like jalapenos so the recipe does work without it)
2 large red bell peppers (cut)
4 large stalks of celery trimmed
2 medium carrots
Directions: With the use of a juicer, process the ingredients; you may add serve over ice or pour directly into glasses.
Carrot Juice
1 pound of large carrots (cleaned)
½ lemon (peeled and chopped)
Some romaine lettuce leaves usually around 4 or five
1 large apple (Feel free to use two apples if you want a sweeter taste to your juice)
Directions: Place ingredients into juicer and process. Drink on ice or without.
Tomato Juice
Ingredients:
3 c. tomatoes (chopped)
1 or 2 stalks of celery
1 cucumber (I peel mine and chop before putting in juicer, but others like eating the skins)
Salt and pepper to taste (I use sea salt)
Directions: Place ingredients into juicer and process. During the summer months I like to add fresh basil or fresh oregano from my garden. You can add almost any type of vegetable such as a jalapeno pepper or onion to the juice. It really depends on your taste.
Spinach Juice
I haven’t tried this recipe yet. I need to buy some spinach first.
Ingredients:
1 large bunch of spinach
2 apples
½ lemon peeled and chopped
Directions: Put ingredients in the juicer and process.
