As winter transitions to spring, people think about putting away their sweaters and dragging out lighter clothing. We should also think about putting away the heavy winter cookery such as soup pots and roast pans. It’s time to think about delighting your family with lighter, more colorful meals that will help usher in the light airy spring weather.
Serve more Veggies
In the winter we tend to make heavy, warm comfort food to stave off the cold. Wake up your family’s spring appetites by serving more fresh vegetables that are not floating in a soup, stew or a thick heavy sauce. The veggies will put a pop of color on your table.
Slice several bright red tomatoes and arrange them around the outer circle of a colorful platter. Add freshly steamed cauliflower and broccoli to the center. Sprinkle a small amount of parsley and parmesan cheese over the entire platter.
Instead of the veggie’s in the center, you can also fill the center of the platter with lettuce leaves and then pile chicken, ham or tuna salad on top of the lettuce. Serve the platter with large slices of French bread and you have a colorful, yet light spring-time meal.
If your family enjoys boiled eggs, make sure to add boiled egg slices to either of the above suggestions or even scatter deviled eggs around the platters for an even lighter, spring-time look to your dinner service.
Lighten up Desserts
The heavy cakes and pies were great for cold winter nights when everyone just wanted to lounge around in the evenings. Lighten up the desserts so your family will still feel like enjoying the longer daylight outdoors.
Jell-O is a great alternative to cakes and pies and you can dress it up by adding fruit, cool whip. Make a Jell-O pie by pressing a graham cracker crust into a pie plate. Mix the Jell-O according to package directions. Allow it to cool and thicken slightly before adding strawberries to it and then spoon it into the pie crust. Chill it until firm and then spread cool whip over the top of the pie.
Transitioning your meals from heavy winter comfort foods to light colorful spring foods will help transition your family from sitting around with full stuffed tummies on a cold winter’s night, to enjoying the warm spring evenings.
While you are outside after a light spring meal, enjoying the warmer lighter evenings, you may even feel like dragging out the BBQ grill and cleaning it all up so it will be ready for the next warm afternoon!
