The Kentucky Derby is this weekend, and the event referred to as the greatest two minutes in sports attracts millions of viewers. Food and sports go hand in hand, and if you are watching the race at home, here are some recipes for appetizers, main dishes, desserts, and beverages inspired by the Kentucky Derby for you to make at home.
Pickled Shrimp. Pickled shrimp will be a great hors d’oeuvre. Ingredients needed are 2 pounds of boiled and chilled shrimp, 2 medium sized purple onions sliced into rings, 1 cup of vegetable oil, 1 ½ cups of white vinegar, and ½ cup of sugar. Place the shrimp and onions in a bowl, alternating layers. In a separate bowl, combine all of the other ingredients and pour over the shrimp and onions. Refrigerate for at least 6 hours, stirring the mixture occasionally.
Garlic Cheese Grits. The South is known for its grits, so this dish should definitely be a part of your Kentucky Derby menu. Ingredients needed are 3 ½ cups of water, ½ teaspoon of salt, 1 cup of corn grits, ½ stick of butter, 3 large eggs, separated, 1/3 pound of grated cheese of your choice, and ½ cup of minced garlic. Preheat the oven to 375 degrees. Add salt to the water and boil it. Stir in the grits with an egg whip. Add the butter then remove from the heat. Add the cheese, garlic, and egg yolks. Once the grits have cooled, add in the egg whites. Pour the mixture into a soufflé dish and bake for approximately 30 minutes.
Chocolate pudding. Chocolate pudding is a very simple dessert that is easy to make. Ingredients needed to make chocolate pudding are 2/3 cup of sugar, ¼ cup of cocoa powder, 3 tablespoons of cornstarch, ¼ teaspoon of salt, 2 ¼ cups of milk, 2 tablespoons of butter, and 1 teaspoon of vanilla extract. Combine the sugar, cocoa powder, cornstarch, and salt in a saucepan over low heat. Gradually add the milk. Remove from the heat and add the butter and vanilla extract. Serve in individual bowls or glasses.
Sweet iced tea. Sweet iced tea is a common style of iced tea in the South. Ingredients needed are 3 quarts of water, 2 cups of sugar, and 4 tea bags. Boil the water and add the sugar. Add the tea bags and let sit for 20 minutes. Pour the mixture into a jug and add cool water. You can also add lemon slices to the beverage.
Mint Juleps. The Mint Julep is the traditional beverage of the Kentucky Derby. Ingredients needed are 2 cups of sugar, 2 cups of water, fresh mint, crushed ice, and bourbon. Boil the sugar and water together. Cool and place in a covered container with six sprigs of fresh mint. Refrigerate the mixture overnight. To serve, fill each cup with crushed ice, and then add one tablespoon of the mint syrup and two ounces of bourbon. Stir the drink and garnish with a sprig of fresh mint.
