If you have a thing for exotic, cultural or spicy foods which include rice, chicken, beef or duck… then this is definitely the article for you.
My personal preference is Thai food. Why you may ask? It’s quite easy to prepare and super delicious! Be it for my own enjoyment, family gatherings or even serving to guests, my Thai cooking always does the trick!
Here’s a few of my favorite Thai food recipes to tempt and pleasure your taste buds.
1) Thai Basil Chicken Fried Rice (With shrimp)
(Khao Pad Kra Prao Gai)
This is the one dish you’ll never tire of. Even if you had it for 3 days straight!
1 cup of basil leaves
Long Grain or Jasmine rice
2 crushed Serano peppers or 3 Red or Green spur chili peppers
2 1/2 teaspoons of Vegetable Oil
1 1/2 fish sauce
1 1/2 soy sauce
8 ounces boneless chicken (Cut into small sizes)
3/4 teaspoon sugar
6 ounces shrimp
1 sliced onion
3 bell peppers
1 tablespoon Cilantro
~ Cook rice as you normally do. When its fully cooked put it on the side. Make sure its not all wet and mushy.
~ Heat the oil in a pan then add the garlic, chilli peppers and onion. Stir for a few minutes till golden.
~ Add chicken, soy sauce and fish sauce. Keep stirring until the chicken is thoroughly cooked. If the chicken is pink and not well cooked it might cause food poisoning.
~ Throw in the cooked rice, ball peppers and shrimp. Stir until the rice it completely mixed in with the sauces and the shrimp cooks too( Shrimp doesn’t take long to cook)
~ When it’s like a minute left, add the basil leaves and cilantro! After a minute or so, your food is done. Serve on a plate, cut a few lemon slices, place them on the side and enjoy while hot!
2) Fried Rice with Roasted Duck
(Kaow pad ped yang)
This is duck dish is not only healthy but Simple to make and without a doubt scrumptious.
* Boneless duck
* Jasmine Rice
* 2 1/2 tablespoons of vegetable oil
* 2 tablespoons of Soy sauce, Vinegar,white pepper powder and sweet soy sauce.
* 1 tablespoon of chopped garlic
* Spring Onion cut in small chunks
* Onion sliced in long chunks
* Pickled ginger
* 1 Lightly sliced Red chili pepper
~ Start by roasting the duck and steaming the rice.
~ Heat a pan, add onion and garlic and just like the first recipe I mentioned, fry till golden.
~ Add the roasted duck, stir for about 6 minutes, it’s already cooked so this is done mainly to blend it with the other ingredients.
~ Throw in the rice, sweet soy sauce, soy sauce, vinegar, and white pepper powder. Mix them well.
~ Take the coriander and onion, sprinkle them on top then finish with the chilli and ginger and wala! Your dish is done!
3) Thai Grilled Squid
(Pla meuk yang)
Squid is another one of my favorites, this recipe is a definite “Must try”!
* 1/2 kg Squid
* Teaspoons Thai fish sauce and Thai chilli paste
You’ll need two ingredients to marinate the squid.. 2 tablespoons of lime juice and 2 tablespoons of butter
* Vegetables of your choice e.g tomato,broccoli,cucumber,carrots e.t.c
Here’s what you’ll need for sauce
* 2 tablespoons minced garlic
* 3 tablespoons of lime juice
* 1/2 tablespoons sugar
* Olive Oil
~ Start by washing the squid and carefully removing the parts that are not meant to be eaten. It’s inner parts, black ink and eyes. After cleaning the squid, rub it with salt and marinate in butter, Thai fish sauce, Thai chilli paste and lime juice for 40-60minutes. This is important because it intensifies the flavor.
~ While the squid is marinating, mix the sauce ingredients together then place it on the side.
~ Prepare your vegetables too.
~ Using charcoal grill the squid until it’s completely cooked. Then pour the sauce on top and serve with veggies.
~ Your dish is done enjoy!
