This is the continuation of my Taste of Home Annual Recipes where I share my choices for the best recipes in various categories for each year I have in my collection. I hope you find these recipes something you will try in your own kitchen and they are enjoyed by your family and friends as much as they are by mine .
These are my choices for the best side dish recipes from the 1999 Taste of Home Annual Recipes
Spinach Dumplings – Once again a recipe that includes my much loved spinach and to enjoy it with dumplings is just a bonus. My mom always made chicken and dumplings and it was a dish I always looked forward to. I could never get my dumplings to come out as tasty as hers even the simplest recipe with Bisquick, but I was only too happy to give this recipe a try, I just might be successful with this one. Green dumplings might look a bit odd, but don’t be fooled, these green balls of dough are amazing!
Sweet Potatoes Au Gratin – Now I have enjoyed sweet potatoes as my mother made them during the holidays as well as her Au Gratin potatoes, but having the two ideas mixed together was something new. A really simple recipe to put together that just might become a regular standby in your home.
Campfire Potatoes – Growing up we would go camping a lot and I loved the meals that we would cook over the camp fire. Cooking in this manner gives food such a wonderful flavor. This recipe is listed in the cookbook for the campfire, but you can make it in the oven just the same. I use a 350 degree oven and cook them for about 30-45 minutes, just keep checking them after the first 30 minutes. I like to add fresh garlic slivers to this recipe, but then again, I add it to nearly every recipe I make. These make a great side to any grilled meat or really to any main dish you are having.
Broccoli Rice Casserole – This is almost like having broccoli and rice soup and boy do I love how cheesy this dish is. If you have someone who does not like mushrooms, you can replace that soup with cream of chicken or even cream of broccoli. For a healthier alternative, add some brown rice instead of the white rice. I have not tried this yet, but I plan on incorporating quinoa in some way, I can’t imagine that this would be anything but delicious in the end.
Scalloped Spinach – I have to add yet another spinach recipe and of course the fact that it includes cheese is no accident. Sure to be a hit at home, gatherings or any potluck this easy to make and quicker to disappear.
