Pasta Fusion Recipes
I love pasta, and enjoy experimenting with different pasta and pasta sauce recipes. I have come up with one lasagna recipe that can be modified three different ways. The sauces of the lasagna are actually ingredients beyond the normal tomato mix. I consider the different layers of the recipes to be the sauces. You can prepare it early, freeze it in portion sizes, and just microwave or warm in the oven when ready to eat. All three require lasagna noodles (nine strips); I use whole wheat to be healthier. Preparation time takes fifteen minutes and cooking time is 35-40 minutes. Enjoy!!
- Preheat the oven to 350˚
- Boil the lasagna in two cups of water for 8-10 minutes, add a pinch of salt and a tablespoon of olive oil to the water, rinse thoroughly
- Lightly grease (with olive oil) a 9 x 13 inch baking dish
Chicken Cheese Lasagna
Cook or have on hand 2 cups of pulled chicken, one can of refried beans, and two cups of cheddar cheese. Alternate in layers the chicken, pasta, refried beans, and cheese in your baking dish. Make sure your bottom layer is pasta and your top layer is cheese. Bake 35-40 minutes (the top cheese will be melted completely and slightly golden in color). I serve it with a dollop of sour cream. You will love this!
Steak and Cheese Lasagna
Cook or have on hand 2 cups of pulled chicken, 1-½ cups of sliced onions and tomatoes mix, and two cups of mozzarella cheese. Alternate the steak, pasta, tomato/onion mix, and cheese in your baking dish. Make sure your bottom layer is pasta and your top layer is cheese. Bake for 30 minutes.
Shrimp and Cheese Lasagna
Cook or have on hand two cups of shelled medium size shrimp, 1½ cup of onions and green peppers chopped, two cups of a cheddar and mozzarella cheese mix. Alternate the shrimp, pasta, onion/green pepper mix, and cheese mix in your baking dish. Make sure your bottom layer is pasta and your top layer is cheese. I serve this yummy lasagna with a scoop of sour cream and a scoop of guacamole on the side.
You can add, or switch up many of these ingredients. For the times I have felt decadent,I have added ricotta (1 cup as an additional layer). I am sure other items can be added to make up different layers. Have fun with this recipe, my concept of what a sauce can be, and enjoy it!
