Cilantro Chicken Salad – I love a good chicken salad and this recipes is one that I have added to my recipe collection. I usually use tarragon in my chicken but this version from Skinny Taste use cilantro and some lime juice which actually give it a Latin flavor. Gina has it displayed in a tomato which gives it a very light and refreshing appeal. I really enjoy having my tuna salad served in a tomato and this works as well. The colors of this dish are so appealing, just looking at the picture makes me hungry. Imagine a chicken breast that is stuffed with bacon, scallions, cream cheese as well as cheddar jack cheese and some diced jalapenos. The outside is crusted with bread crumbs but you can substitute seasoned panko is you like, either way you get a great crunch when you slice into this. Chicken and White Bean Enchiladas with Creamy Salsa Verde – Wow, these are so awesome, I can’t wait to cook up a batch of these. Picture this, shredded chicken that has been mixed with green chili, sour cream and cheese and add in some white beans. This mixture is rolled up inside a low carb tortilla, topped with the green chile Enchilada sauce and sprinkled with some fresh cilantro, scallions or you can use both. The cheese is a reduced fat Mexican cheese and light sour cream is used to keep this on the low fat side. This is a definite must try recipe in my opinion, I think you will enjoy it as much as I have, I would have some beans and rice as the side dishes, there are low fat recipe for these that you can make to keep it low fat. Grilled Chicken with Spinach and Melted Mozzarella – If you think making a grilled or baked chicken breast with some seasoning is boring, this recipe is perfect for you. You don’t have to go to much trouble to transform you chicken breast into something that is not only colorful but delicious as well. This chicken is spiced up with some garlic to begin with and it is topped with spinach that has mozzarella cheese sprinkled on top and the whole thing is topped with a couple of slices of jarred red peppers. Grilled Pesto Chicken and Tomato Kebabs – I really enjoy having kababs when I barbecue, they are easy to make, they don’t take much time to cook and they always come out tender and juicy. A trik that you can use when making these is to use two sticks for each kabab that way they won’t roll around on you, I also soak my sticks before using them and it helps to keep them from burning.
