I have never been a big vegetable eater. My wife would make them fifty ways from Sunday and I just couldn’t take in what I needed to maintain a healthy lifestyle. Through juicing, my wife found a way to get me to enjoy in a cup what I couldn’t on a plate. Try out these three recipes that we have made and see what you think; it’s a fast easy way to get your day started.
Thai Style Carrot Juice
(If no juicer, you can use a sieve)
1 teaspoon of grated ginger or about 1 inch
2 teaspoons of minced garlic
Put all ingredients through juicer; enjoy a delicious carrot based vegetable juice with a hint of ginger and garlic. May not sound appealing but the taste is a kick start over the normal coffee.
**If you are using the old tried and true sieve, cut ends off of carrots and shave, cut into 1 inch chunks and mix the grated ginger and minced garlic with 2 ½ cups of water in a medium pot on the stove. Bring to a boil and then simmer until carrots are tender. Pour contents of put into sieve making sure to catch the juices and press the solids through the sieve. I then like to use a blender to smooth my drink out. Not a quick way but it is a way.
Start Me Up
Juicer or **Above Sieve Method
3 Stalks of Celery
¼ lb of asparagus
½ lb Carrots
¼ of a sweet onion
Wash all vegetables with a vegetable brush
Combine all ingredients through the juicer

We enjoy making this juice before a night on the town. It offers just enough pick me up for us to enjoy a night without our children.

1 medium Sweet Red Pepper
¼ crown of broccoli
6 whole carrots
1 in of grated ginger
Combine all ingredients through juicer or use Sieve Method above**
Pour and enjoy great for a weekend of yard work.
Whatever recipe you try, be sure to experiment on your own, combining different vegetables can offer many rewards. During summer months, my wife will transfer the juice into the blender and combine ice to make a slush drink that is cool and refreshing.
