Poached Eggs with Spinach and Tomato
Poaching an egg is a very healthy alternative to frying it. The ingredients you will need are:
4 large eggs, 1 tablespoon of olive oil, grape tomatoes cut into halves, 1 teaspoon of salt, baby spinach, 1 clove of garlic, 2 tablespoons of vinegar, and 1 tablespoon of chopped chives.
Heat the oil in a pan. Add the tomatoes, spinach, salt, and garlic. Once you have cooked the tomatoes and spinach to your liking, discard the garlic (it is only for flavor), and transfer to a plate. Fill a shallow pot with 2 inches of water and the vinegar and boil. Break each egg into a separate bowl and gently slide each egg into the water. Cover the pot and cook the eggs until the whites are opaque and the yolks are cooked to your liking. Use a slotted spoon to transfer the eggs onto a paper towel to drain any excess water.
Place some spinach on four separate plates. Place a poached egg and some tomato halves on top, and sprinkle with some chives. This recipe is for four servings, but you can always reduce or increase the ingredients accordingly.
Mushroom and Pepper Omelet
Your omelet doesn’t have to be fattening and filled with grease. Here is a recipe that includes vegetables. The ingredients needed are:
1 teaspoon of olive oil, ¼ cup of chopped green onions, ½ of a medium sized green bell pepper cut into thin slices, 2 cups of fresh mushrooms, sliced, ½ cup of chopped tomatoes, ½ teaspoon of salt, 2 teaspoons of fresh parsley, chopped, 8 large eggs, 2 large egg whites, ½ teaspoon of butter, ½ cup of the shredded cheese of your choice (I recommend mozzarella or cheddar).
Heat ½ teaspoon of olive oil in a large pan over low heat. Sauté the green onions, bell peppers, and mushrooms. Add in the tomatoes and ¼ teaspoon of salt. Remove the vegetables from the pan and set aside. Place the remaining ¼ teaspoon of salt, parsley, eggs, and egg whites in a bowl and whisk. Place the remaining ½ teaspoon of oil and butter in a pan over low heat. Once the butter melts, add the egg mixture to the pan and cook to your liking on both sides. Add the vegetable mixture to the omelet and fold in half. Place the omelet onto your serving dish. You can also cut the omelet into wedges to serve.
Roasted Asparagus and Scrambled Eggs
It might not sound appetizing to combine scrambled eggs and asparagus, but this recipe is both nutritious and delicious. It is also very simple to make. The ingredients needed are:
Asparagus, olive oil, 6 eggs, ¼ cup of grated Parmesan cheese, and 1 tablespoon of butter.
Preheat your oven to 400 degrees. Cut off the tough ends of the asparagus and cut the stalks into ½ inch pieces. Place the asparagus on a baking sheet, drizzle with olive oil, and sprinkle with salt according to taste. Roast the asparagus for 20 minutes until it is tender, yet crispy. In a bowl, whisk together the eggs, cheese, and salt. Melt half of the butter in a pan and pour the eggs into the pan. Add the asparagus pieces on top of the eggs and cook on low heat, stirring constantly. Once the eggs are cooked to your liking, remove the eggs from the heat, add the remaining butter, and stir the eggs until the butter melts.
