Spring is in the air and, oh my, we’re almost losing our shoes jumping up and down in celebration; it is the season that turns stoic and stern souls into jovial citizens itching to enjoy the merriment of springtime.
A certain freshness and newfangled allure for life comes with the changing of the cold of winter to the color of spring. And life as we know it changes with the guard, and we are suddenly swept into a more peaceful and pleasant existence. From being able to go on walks without the very skin on our face turning purple, to being able to enjoy a meal in the company of chirping warblers and blooming flowers. Head to your garden, or a local farmer and pick up these spring salad supplies.
Break out the grill
The warmer weather of spring means that folks plagued by a cold winter can now comfortably step outside and grill. This also means that food preparation can be more than a treat. Here is what you will need for this salad recipe:
About 2 small to medium sized zucchinis
2 baby eggplant
2 yellow squash
1 big bell pepper
1 big red onion
4 plumb tomatoes
1 pound of asparagus
½ teaspoon of salt
2 tablespoons of olive oil
6 cups of spinach leaves
Crumbled feta cheese
This recipe calls for a number of tasty things. Make sure to preheat the grill to a temperature between 350 and 400 degrees Fahrenheit; while the grill is warming, make sure to cut up the vegetables into thick slices, usually about four per vegetable. Then toss them in a bowl mixed with the salt and the olive oil.
The next step comes the grilling. Simply put them on a greased grill rack and cook the vegetables roughly five to six minutes on each side, or until they become tender. Cut them into smaller pieces for eating after they are cooked, mix them with the greens for salad, sprinkle some cheese on and serve with your favorite dressing. This spring meal will not only be filling to a few people, but also refreshing.
Add some fruit
This salad is perfect for a lunchtime snack out in the sun. All you have to do is collect half cups of things like raspberries, blueberries, kiwi, and any other fruit that you enjoy consuming. Mix them with fresh spinach or salad greens and enjoy. It is as simple as that.
Grilled chicken and greens
Another wonderful springtime salad that you can easily make yourself is by grilling up chicken, bell peppers, zucchini, and some of your other preferred vegetables; grilled chicken goes great with both vegetables and fruits, so this meal can cover a lot of your daily nutrients, while tasting delightful. Grill until the vegetables are tender, and the chicken is well done. Serve and enjoy.
