Quick recipes are great and the key to making dinner after work. Here are some recipes I like to use.
1 cup corn meal
1 cup all-purpose flour
4 teaspoon baking powder
1 ½ cup milk
2 medium eggs
1 cup melted butter or margarine
1 pinch salt
2/3 cup honey
Preheat oven to 425 degrees.Using a mixing bowl add the corn meal, milk, and eggs. After blended well, add melted butter, sift flour and baking powder, 1/3 cup of honey and a pinch of salt. Before adding the corn bread batter, add ½ cup of melted butter and place in the oven for 5 minutes. Poor batter into the skillet and bake for 35 minutes. Take out the oven and spread 1/3 cup of honey on the top of the corn bread. Let cool for 5 minutes.
Beef and Potato Stove Top Casserole
1 lb. ground beef
2 tablespoons of extra-virgin olive oil
1 tablespoon of garlic power
1 tablespoon of onion salt
16 oz. of cheddar cheese
5 large potatoes cut into small chunks.
Cook ground beef using medium heat until thoroughly cooked and the boil potatoes until tender. Drain the grease from the ground beef using a strainer. Put meat, potatoes, extra-virgin olive oil, garlic power, and onion salt. Cook on low for 20 minutes or until the potatoes are browned a little. Top with cheese.
Shrimp and Broccoli Stir Fry
2 lbs large cleaned shrimp
2 lbs cooked broccoli
1 cup grated carrots
3 tablespoons extra-virgin olive oil
1 tablespoon black pepper
¼ tablespoon of garlic salt
¾ tablespoon crushed red pepper
Heat extra-virgin olive oil until warm, add broccoli, carrots, black pepper, and garlic salt. Stir fry for 10 minutes, add shrimp and red pepper until shrimp are cook. Serve over white rice.
Country Style Breakfast Potatoes
10 cooked and diced red potatoes
1 sliced brown onion
1 bell pepper cut into small strips
1 tablespoon of black pepper
4 tablespoon of cooking oil
Heat cooking oil into the skillet. Add potatoes until slightly browned. Add onion, bell pepper, and black pepper until veggies are tender. Cooking time approximately 20 minutes.
Mac and Cheese with Bacon & Jalapeños
½ pound of cooked macaroni noodles
1 lb cooked crisp crumbled bacon
3 large sliced jalapeños peppers
10 ounces of cheddar cheese
8 ounces jack cheese
1 tablespoon of salt
2 tablespoons of butter
½ cup of milk
Mix the egg and milk until blended together then add salt. Melt butter in the skillet and add noodles. Add blended milk, crumbled bacon, jalapeños, and jack cheese. Using a large cooking, stir slowly until the cheese is melted throughout the noodles and the jalapeños are tender for approximately 10 minutes. Remove from the fire and top with cheddar cheese. Let it set for about 5 minutes and it’s ready to serve.
