Baking everything from cookies to pies from scratch at a high altitude can be tricky. Small adjustments and using the proper equipment will help ensure your treats come out perfect every time. Here are my five tested baking tips to follow when you’re cooking homemade treats at a high altitude.
Preparing Baking Pans
It’s important that you use the exact size pans your recipe calls for. If you use a pan that’s too small, your dish may spill over or rise too much. When you’re baking muffins, cakes and other desserts at a high altitude, they tend to stick to the pan. Grease your pans, then line them with parchment paper. Spray cooking spray on your paper, then sprinkle flour on it.
It’s very important that you preheat your stove. I find at least 15 minutes is enough time for most recipes. You can put an auxiliary thermometer inside the stove to make sure it has reached the desired temperature called for in your recipe. I also bake my food a few minutes longer that the recipe calls for. You can check to see if your treats are done by sticking a knife in the center of them. When the knife pulls out clean, your treats are done.
Make sure all the ingredients you’ll be using for your recipe are room temperature to get the best results. Also, clean your fresh produce with warm water before you use it in a recipe.
If your batter is crumbly or dry, add 1-tablespoon of water at a time until it’s moist. I also add one extra egg for every three my recipe calls for. It’s also a good idea to always use extra large eggs in a recipe you’re going to cook at a high altitude.
Keeping Food Moist
One of the hardest things to do is to keep your food moist after it’s baked because the atmosphere is a lot dryer. After your remove your food from the oven, cover it with plastic wrap to help keep it moist. You could also put your treats in plastic bags or in containers. Don’t store your goodies in your refrigerator unless your recipe indicates to do so.
