I never liked asparagus when I was growing up, but at some point I decided I liked it, but only the canned version, you know the one with the giant on the can. It would be later in life that I discovered how amazing this vegetable was when bought and cooked fresh and then prepared any way you like. I am a huge fan and am always trying to find new recipes to enjoy it in.
Ham and Asparagus Strata – This dish fits perfectly into so many situations and is one of those recipes that after you make it you love it so much you can’t wait until the next time you can make it again. Brunches, Easter, Mother’s Day, a graduation, any time you serve this dish it is sure to be a hit. Depending on the size of your crown, you can multiply this recipe to suit your needs and any leftovers will taste delicious the next day or two. I really enjoy pouring some hollandaise sauce over this, it really sets it over the top for me.
Garlic Shrimp with Asparagus – Shrimp is one of the few seafood’s that I will eat and paired with asparagus makes for a great combination. I like to serve this over pasta, you can use angel hair or regular spaghetti or any other style that you think you would enjoy eating with this dish. This recipe makes its own juice and you will want to take advantage of this and one way to do this is with some chunks of crusty bread and don’t forget the butter. A bright and colorful dish, give this a try one night, it only takes about 30 minutes to prepare.
Ham and Asparagus Au Gratin – What I like about this dish is that it is made with spinach noodles so I feel like I am getting my vegetables in more than one way and it is a healthier choice. The recipe offers butter or margarine, I use real butter and with the addition of the ham, asparagus, and cheese this is a delicious and creamy dish. If you don’t have deli ham on hand, but do have another ham from a previous meal you can substitute that and it will come out tasting delicious as well. If you have picky eaters, you can substitute broccoli in place of the asparagus, get creative with your cooking.
Asparagus and Herb Lasagna – Whether you are preparing this for dinner with the family or you’re having a dinner party, you can save time by making this ahead of time, it can last for up to two days in the refrigerator. This recipe includes tarragon, which is a spice I use in several dishes and it always sets them above the rest, people usually can’t place what the flavor is. More of a white lasagna this looks very appealing when all is said and done and you won’t be able to wait to dig into this dish.
Ham and Asparagus Spaghetti Casserole – This is a great recipe with three ingredients I like all in one dish. A different way to enjoy spaghetti when you grow tired of the usual red sauce over some noodles. Actually, this has everything you need, protein, starch and vegetable, all you need is to add some fruit on the side and you have a meal that hits all the food groups. You can even switch up the ingredients for something new but I suggest you begin with this recipe as it is designed, you will enjoy it.
I think you will enjoy trying these five recipes in your kitchen, something new for your family and friends to enjoy as well. If you have picky eaters that don’t like asparagus, one of these dishes just might be the one that they decide they actually like it.
