Easy Low-Carb Brunch Recipes

If you want to serve a delicious brunch without all of the carbs, try these easy frittata recipes together with a fresh fruit and yogurt cup for a delicious and appealing brunch that is sure to please.

I grew up in an Italian family where my mother lovingly prepared frittata using simple ingredients for breakfast, lunch, and sometimes even dinner. Here is the recipe.

Spinach Frittata

Ingredients

One large package of fresh spinach

(If using frozen spinach, thaw first and drain)

6-8 eggs

1/4 cup milk

1 garlic glove minced

1/2 cup chopped onion

salt and pepper to taste

1/4 cup parmesan cheese – optional

3 T. olive oil

Directions

  1. wash spinach, drain well, and cut into small pieces. put into a large bowl
  2. beat eggs with milk and pour over the spinach
  3. add salt, pepper, and cheese (if desired) stir together and set aside.
  4. sauté onions in olive oil until translucent in sauté pan or in an electric skillet for larger frittata.
  5. add garlic and continue to sauté for a minute or so longer
  6. add spinach and egg mixture to skillet, cover and cook on medium until well set and sides are golden.
  7. place in oven or on warming tray until ready to serve

Another frittata I enjoyed growing up was egg, potato, and hotdog frittata that my mother served on crusty bread, a personal lunchtime favorite. You can also use bacon or ham for this frittata that is certain to be a brunch favorite too.

Potatoe, Egg, and Meat Frittata

Ingredients

3-6 potatoes

1/4 cup chopped onion

6-8 eggs

1/4 cup milk

3/4 to 1 cup cooked cubed ham, (or crumbled bacon or sliced hot dogs)

1 cup shredded cheddar cheese-optional

salt and pepper to taste

3 T olive oil

Directions

  1. peel potatoes and cut into slices.
  2. sauté onions in olive oil
  3. add potatoes and cook until done,
  4. beat eggs and add milk, choice of meat and mix together
  5. pour egg mixture into skillet over the cooked potatoes until potatoes are completely covered.
  6. cover and cook on medium until sides are golden and eggs are well set
  7. add shredded cheddar – if desired
  8. cut into slices or wedges to serve

Fresh Fruit and Yogurt Cups

Ingredients

package of fresh strawberries

package of fresh blueberries

large container of vanilla yogurt

Directions

  1. wash and drain strawberries and blueberries
  2. place halved strawberries and blueberries into cups alternating with vanilla yogurt for parfait effect
  3. sprinkle with granola – optional

Serve up frittatas cut in wedges and garnish with orange slices cut in half together with fresh fruit yogurt cups for a healthy low carb and delicious brunch that is sure to please. Mangia!
