Hash Brown Nests with Portobellos and Eggs – The crust for these individual egg quiches is made from hash browns. When you serve these to your family and friends, they will look like you fussed in the kitchen while they really are easy to make. Great for kids and they can actually eat them with their hands like a cupcake. I love substituting Swiss cheese in place of the Feta and adding my favorite green vegetable, spinach. These have only 101 calories and the diabetic exchange is: 1 medium-fat meat, 1/2 fat.
Artichoke Quiche – This recipe has a really interesting crust, it is made from a cheesy rice mixture. The filling consists of egg substitute, artichoke hearts, and various seasonings, this is a really healthy dish for anyone to enjoy. If you have those individuals that need to have their meat, you can add in some ham or sausage, you may want to increase the eggs by 1 or 2. Some ways that you can change up this recipe is by switching the cheese from cheddar to Havarti and you can add some horseradish to the filling mixture. You can adjust the ingredients to suit your preferences, make it your own.
Breakfast Mini Pizzas – Generally, when we think of pizza it is something we eat in the afternoon or evening, here is a recipe for a breakfast pizza. Made on a whole wheat English muffin that is topped with some marinara sauce, you add on some Italian cheese blend and pepperoni. If you don’t like pepperoni, you can substitute ham, sausage or any other meat that you like. Get creative with this recipe and add other toppings like mushrooms, onions or bell peppers are a few ideas.
Florentine Hash Skillet – A really quick all-in- one-skillet – Another dish that has that delicious spinach along with cheese, I love both ingredients for breakfast, lunch and dinner and it is so very good for you as well. This is very similar to what my son has me make for him only it is made with toast, I think this version is much better. Really simple to make you basically have you hash browns and spinach in the pan and you crack in your egg and top with cheese. This is another recipe where I see a good hollandaise sauce would be so good drizzled over this and something my husband would like is country gravy on it as well as a side of biscuits. Top it off with lots of black pepper and you are good to go.
Sweet Potato-Turkey Hash – Sweet potatoes are a nice change from the usual hash browns or country potatoes and in this recipe they pair them up with some skinless turkey or chicken a few seasonings and some reduced-fat sour cream. You can top this off with some canned cranberries if you want it to look pretty and if you do, don’t have any additional fruit on the side. Sweet potatoes are really good for you, I use them in my juicing and if you can use organic it is all the better in my opinion. This recipe is nutritionist tested and approved and I would serve some fresh fruit on the side.
