People love to grow their own vegetables in the spring and even cook with them. Some of the popular vegetables that are grown and eaten in the spring time are broccoli, green beans, snap peas, mushrooms, red, green and yellow bell peppers, different types of salads, garlic and onions, carrots, spinach, and cauliflower. You can even get out and enjoy these foods on a picnic at the lake or outside on your patio with your family. Listed below is a very simple and easy recipe that you can cook and try this spring. 6 large green bell peppers
1lb. ground turkey
1 small yellow onion
1 cup cooked white rice
1 cup shredded cheddar cheese
Seasoning of your choice to season turkey meat
Start cooking the ground turkey and add your choice of seasoning to the meat. While the turkey is still cooking, dice up the yellow onion and add that to the meat and finish cooking. Next, mix the cooked white rice, cheese and the turkey together in a large bowl. Cut off the tops of the green bell peppers and clean out the pulp and seeds. Place the peppers upright on a cookie sheet. Preheat the over to 350 degrees. While the over is still preheating, take the turkey and rice mixture and stuff the bell peppers with it. Fill the peppers clear to the top. Bake for 30 minutes. Top of with extra cheese the last 5 minutes of cooking. Serving size: 6 bell peppers.
You can adjust the serving size to meet your needs and you can also substitute the ground turkey for shredded chicken, or ground beef. You can also substitute the green bell peppers for red or yellow ones.
