I see food as a celebration. I love to cook meals and I love to bake. I also get hungry late at night, and that is not exactly a time I want to put a lot of effort into making a bite to eat. Late at night, I want something simple and tasty.
Throw Together Beans and Rice
This one is like a mini meal, but it is really tasty and satisfying. It is also my favorite meal, I just make less when I want a snack. What you need:
- Leftover or instant rice
- Leftover or canned beans
- Butter (optional)
If you do not have leftover rice, you will need to cook the instant rice according to the package directions. For a snack portion, I like to use about a half cup serving of cooked rice. Once the rice is cooked, you just throw the beans in with it. If they are canned beans, make sure you rinse them well before adding them to the rice. My personal favorite seasoning for beans and rice is curry. You can use just about anything you like. You will probably want to warm up the whole mixture for about 30 seconds in the microwave. If you want butter, add it right before serving.
Make this recipe ahead of time and store it in an airtight container on your counter. You can use any kind of seasoning you like. Of course, my favorite is curry, but I also like chili powder. Here is what you need:
- Canned chickpeas (garbanzo beans) rinsed and dried
- 1 tablespoon olive oil
Here is how you make them:
- Preheat your oven to 350 degrees
- Line a cookie sheet with non-stick aluminum foil
- Dump your chickpeas in a bowl and add olive oil
- Toss the chickpeas and olive oil to coat
- Put the chickpeas on the pan in a single layer
- Sprinkle with seasoning to taste
- Put the chickpeas in the oven for about 20 minutes
Ovens do vary, so check the chickpeas often. If they are not crispy after 20 minutes, then put them back and keep checking them every few minutes. Once they are finished, let them cool and enjoy.
Toaster Oven Gooey Peanut Butter Sandwiches
This one is super easy, but you do have to have a toaster oven. What you need:
- Peanut butter (or any nut butter)
- Toaster oven
Put peanut butter on both sides of the bead. Place the bread, peanut butter side up, in the toaster oven. Toast the bread for a few minutes. Take the bread out of the toaster oven and put the sides together. If you like, you could also add sliced bananas before you put the sides together.
