Bunnies are cute cuddly creatures appearing in huge numbers around Easter. Bunny images on everything from chocolate to party ware, t- shirts and Easter cards, these adorable furry animals are everywhere. Make this delicious bunny cake, suitable for children’s parties, from my easy to make recipe and everyone will be hopping with Easter happiness. Pillsbury Brownie Mix and Betty Crocker cream cheese frosting for those who prefer chocolate bunnies are quick and easy alternatives for cooks in a hurry.
Ingredients for Cake
1 cup self raising flour
1 cup sugar
1 cup soft margarine
1 tsp vanilla essence
Makes 2, 7″ round sandwich cakes
Frosting and decoration
Confectioner’s sugar and water
Large mixing bowl
2 sandwich tins
Wire cooling tray
Cake board (I cover a cookie sheet with tin foil and it works great)
Place cake ingredients in a large mixing bowl and beat well until light and fluffy. I use the back of wooden spoon to beat air into mixture.
Divide mixture between two 7″ cake tins greased. Level with spatula.
Bake gas mark 4, 350 F or 175 C for 15-20 minutes until golden brown. Sponge should spring back when pressed, pulling away slightly from edge of tin.
Turn onto a wire cooling rack.
One cake makes the bunnies head, use other to form ears, using a sharp knife cut two oval shapes from the sides of the cake. Use center shape for a bow tie.
Coat whole cake with icing made from confectioner’s sugar and a small amount of water.
Whipped cream, piped looks very professional.
Add candy sweets for eyes and nose. Don’t forget the whiskers
Decorate the bow tie with sprinkles or small sweets.
Use coconut flakes for a fur effect, Small marshmallows would look terrific too.
