5 Low Cost Dinner Recipes

We can all use some savings wherever we can get them and with the following recipes you will find that they are low cost and easy to make. Change up your usual meals and give one of these recipes a try, you just may find it becomes one of your new favorites.

Cheesy Zucchini Pie – Zucchini is one of my favorite vegetables and during the summer months I enjoy growing my own and using them for cooking various recipes. Cheese is another one of my addictions and what goes together better than zucchini and cheese? This recipe bakes up in a crust made from refrigerated crescent rolls and is layered with zucchini, various seasonings, Monterrey Jack cheese and eggs as the binder. Very easy to make and I like to top it off with a dollop of sour cream and a spoon or two of salsa.

Flavorful Meat Loaf – You can’t have a list of recipes that are low cost without including one for meatloaf, it is one of the best recipes to make when you are living on a tight budget. What I like about this recipe is the distinct flavor that it gets from the ingredients ginger and soy sauce. These are definitely not ingredients that I use in my typical meatloaf, but they are a welcome addition as is the red pepper flakes which give it that kick and if you can’t handle the heat just leave them out . r,

Pasta Primavera – This sounds like a very fancy dish to me and I think it taste like a fancy dish, but is is a low cost recipe you can make. This is really a colorful dish with the broccoli and carrot the sauce comes from the condensed cream of mushroom soup and the milk. Seasoned with garlic and black pepper, the only other ingredient is the Parmesan cheese that you sprinkle on top. I personally like to add about ΒΌ cup of sour cream to the mix, it turns it into an even creamier sauce and taste awesome.

Sausage with Apple Sauerkraut – Sauerkraut always has me think of my new Uncle Jack, new because of my recent marriage to my husband. Uncle Jack like many of the relatives are from Pennsylvania and he has made his own homemade sauerkraut and it is a recipe I plan on trying. This dish includes a natural match which is the sausage and with the addition of the apple, you have a new and creative dish that is delicious. The inclusion of apple juice, caraway seeds and fennel seed give the smoked Polish sausage and sauerkraut a tremendous flavor, be sure to give this one a try.

Chicken Veggie Casserole – When mom says eat your vegetables and they are cooked up in a dish like this, I would be only too happy to clean my plate and ask for seconds. This is a one dish meal that will satisfy your hunger and only takes about 20 minutes to make. You will be using cream of chicken soup, some cooked chicken, whole kernel corn, green beans and potatoes. You can see why I said it was a one dish meal, it’s all there. I like to serve a small green salad on the side, it never hurts to get in more veggies.

In today’s economy, we can all use some savings anywhere we can get them. I believe these recipes will help you save on your food budget while providing you with delicious meals at the same time.
