I don’t believe there is any better way to celebrate our country than by having get-together’s, parties, gatherings, anything where we can have all kinds of wonderful food to eat. Each year my family would share this day with our closest friends who would make it a festive gathering at their home where we would bring a food dish along and spend the day talking, laughing, swimming and eating some amazing food. It is always great to see what other food people brought and trying out new things and I think the following recipes would be perfect for any occasion.
Patriotic Taco Salad – This is a fun salad to make, especially for a patriotic celebration because it resembles the American flag. What a creative use of cherry tomatoes, black olive and shredded cheese along with the other ingredients. You can make this with either ground beef or turkey, depending on your preference and you also can use tortilla or corn chips. I like using the corn chips, they give it a better flavor in my opinion and if you use the “scoops” it is like eating your salad with a spoon.
Fourth of July Pizza – This is much like the salad listed above in that it is decorated like the American flag. This is really very easy to make and only requires four ingredients to make. This is a great recipe to let your kids make, it is fun for them to add the stripes and the stars and when people dig into this dish, the kids get to say that they made it. This recipe used a refrigerated pizza crust, American cheese, string cheese and pizza sauce which comes in a can or a jar. You will need a small cookie cutter in order to be able to make the stars and those are easy to find and I believe can even be found at the 99 Cent Only Store.
Star-Spangled Fruit Tart – This is a very crispy, creamy dessert and perfect for the Fourth of July with the way it is designed with the berries forming a star. Red raspberries, blueberries and strawberries are all used to create this festive design. Fruit tarts are such a wonderful dessert to enjoy in the summer weather because it is a very cool and refreshing dessert. The crust of this recipe is made with refrigerated sugar cookie dough and this certainly is a great base for this tart. This would be a good choice throughout the summer months with it being so easy to make and berries ripe and in season.
Santa Fe Corn on the Cob – I would have to say that corn on the cob is my favorite vegetable, when my wife makes it for dinner, she always makes me at least two cobs. Here is a new way to make this tradition vegetable and kick it up a notch. Using butter, garlic, steak sauce, chili powder and some ground cumin you will season up your corn after you let it soak in cold water for 1 hour. This takes a bit of work, but is worth it because you have to peel back the corn husk, season the cob and re-wrap the husks over the corn before grilling. When it is done, we like to peel back the husk and twist it to make a handle to hold onto while eating it.
Nacho Scoops – These are such a great appetizer and they are sure to disappear before your very eyes so make sure to make a big batch of these. These are like eating a mini tostada and are packed with flavor. You can use either beef or turkey for your meat base and you are basically making taco meat. You will need some of the tortilla chip scoops to assemble. Man are these a treat , fill your scoop with the taco meat, sprinkle with cheese and bake then top them off with sour cream and a jalapeno slice. Pop one of these in your mouth, but make sure you have a napkin and don’t talk with your mouth full because these are a hearty serving which I myself have to eat in two bits .
