Breakfast is the most important meal of the day! Especially if you are trying to adapt to a vegan or plant-based diet. Eating right for your first meal can totally set the tone for the entire day ahead. To help you out, here are 10 ideas for a healthy, balanced breakfast that are sure not to bore you!
1. Whole Grain or Buckwheat Pancakes
Pancakes are delicious, and with a little tweaking can be made quite healthy! Use a recipe for 100% whole wheat pancakes, or use a packaged dry mix like Arrowhead Mills’ buckwheat pancake mix. Add a little fresh fruit and Earth Balance (vegan) butter and you have a delicious, healthy meal with plenty of protein, complex carbohydrates, and healthy fats.
Though it’s common knowledge that oatmeal is filled with healthy fiber, most people don’t realize that this hearty breakfast doesn’t have to be dull! You can add in several healthy, flavorful mixings, from peanut butter, fresh fruit, jam, and nuts, to cocoa nibs and cinnamon.
3. Vegan Parfait
This breakfast idea is both quick and delicious! Simply pick up some Silk soy yogurt, So Delicious coconut yogurt, or whatever vegan yogurt you’d like from the store, and layer it in a glass with fresh berries, jam, and granola.
4. Tropical Green Smoothie
Start your day off with a micronutrient kick with a fruity green smoothie. Just blend a cup of kale and half a cup of spinach with some pineapple juice, a banana and mango. Green never tasted so good!
5. Tofu Scramble
A scramble is one of the easiest ways to prepare tofu. Just quickly press it, then mash it up with a fork and pan-fry it with turmeric, onion, soy sauce, and cayenne pepper for a kick. Add whatever veggies you want and enjoy a healthy, protein-packed breakfast. Try tofu-plus which is fortified with extra vitamins and minerals for an extra boost.
6. Whole Grain Bagel Thin
Regular bagels can be a little too heavy with simple carbohydrates for the morning rush and can leave you feeling sluggish by lunch. Trade in your white bagels for whole grain bagel thins, and top with Tofutti cream cheese and jam, or make it savory with a slice of vegan Daiya cheese and some tempeh bacon.
7. Chia Seed Pudding
Chia seed pudding is a super delicious way to work in a healthy breakfast. Just mix a small handful of chia seeds with a half cup of coconut or soy milk, a bit of cocoa and some maple syrup to taste. Let it sit in the fridge at least an hour, stirring ever half hour or so. You can top it with nuts or fruit if you wish.
8. Breakfast Hash
Another good savory breakfast idea is to make a breakfast hash. Just slice one sweet potato and one russet potato and fry them up with a splash of olive oil, garlic and rosemary. You can add in some seitan for extra protein.
9. Breakfast Salad
Breakfast salad provides you with everything you need to fuel the start of your day. Toss some baby spinach with sliced apples, craisins, and roasted almonds and top with a light, sweet dressing like raspberry vinaigrette.
10. Whole Grain Muffins
If you’ve got some time or don’t mind cooking the night before, throw together some muffins! Use a whole wheat muffin recipe and add in some fresh blueberries and walnuts for good measure!
