Weeknights can get hectic for families, even during summer break. Between playdates, late pool and park days, swim meets and baseball games and summer camp or school, weeknights can be tough to fit in family dinner time. Here are some of my favorite casserole recipes perfect for family dinners on busy weeknights. They can all be prepped ahead, too.
Cheesy chicken and broccoli pasta
Using canned or rotisserie chicken, start with four cups of chicken in a large mixing bowl. Add two cans of cream of mushroom condensed soup. You could also use cream of celery soup. Steam or saute small head of broccoli (½-¾ lbs) with any other veggies you like, such as onion or carrots. Mix vegetables into soup and chicken mix. Undercook one pound of pasta (bowtie is perfect!) by draining pasta 2-3 minutes before it’s al dente. Mix into the chicken and veggie mixture and then pour into a greased casserole dish. Top with shredded cheddar cheese. Bake for 25-30 minutes at 350 before eating.
Baked, Italian-style mac and cheese
To make the sauce, start with ½ stick butter in a saute pan and add 3 tablespoons of flour. Cook for 2-3 minutes. Add 3 cups of whole milk and whisk on low-medium heat until sauce thickens. Add 2 cups of mozzarella and stir sauce until smooth. Stir in half a jar of marinara sauce. Undercook one pound of macaroni pasta and drain. Combine pasta and red, cheesy sauce and pour into a greased casserole dish. Top with more mozzarella and parmesan cheese. Bake for 25-30 minutes at 350 before eating.
Saute one pound of ground chicken or beef and saute with one small chopped onion. Add taco seasoning packet and a small can of diced tomatoes. In a pie dish or round baking dish, spoon a ¼ cup of the meat sauce into the bottom of the dish in an even layer. Place a tortilla over top and add another layer of the meat mixture. Add ¼ cup of cheddar cheese and then layer another tortilla. Continue layers and then top the last tortilla with cheddar cheese. Bake for 15-20 minutes at 350. Slice like a pie and serve with sour cream and salsa.
