Being a vegan living in a college dorm can be such a nightmare, especially when finding vegan snacks on campus can be anywhere from difficult to impossible. To make your college experience more livable, here are some vegan snack ideas that you can DIY for little cost with little more than a microwave oven and mini fridge!
Nothing beats a Tofurky sandwich! Just pick up your favorite Tofurky deli slices from the store, and have it on your choice of wheat or rye bread with a spread of Vegenaise and mustard. Also good with dairy free cheddar slices if you can get your hands on some!
Melt some vegan margarine in a bowl. Mix in three spoonfuls of oats, two spoonfuls of brown sugar, and a splash of soy milk. Add in diced apple slices and stir together. Microwave for four minutes and enjoy a deliciously sweet apple crumble!
Fakin’ Bacon and Cheese Bagel
Layer Smart Bacon and a slice dairy free cheddar on a whole wheat bagel. Microwave on high just until cheese is melted. Enjoy a savory breakfast.
If you’re more in the mood for a sweet breakfast meal, pick up some plain dairy free yogurt. Layer in a cup with granola and your favorite flavor of jam. Add fresh berries if you’d like.
Get your favorite flavor of Triscuit crackers (just make sure they’re dairy free). Spread with Tofutti cream cheese, and then top with fresh cucumber slices. Optionally sprinkle with black pepper. Enjoy a salty sweet snack.
Make with your choice of Boca burgers or Boca chik’n patties. Microwave according to the package instructions and top with whatever you’d like: lettuce, tomato, onions, ketchup, mustard… or get creative with vegan sriracha mayo, spinach leaves, or sliced red pepper.
Cheezy Avocado Quesadilla
Use your choice of flour or corn tortillas. Mash 1/2 an avocado and spread over one tortilla. Sprinkle with vegan cheese shreds and mexican seasonings. Cover with a second tortilla and microwave for 45 seconds to one minute until cheese is melted. Slice and munch.
Ramen with Spicy Peanut Sauce
In a bowl, mix two spoonfuls of peanut butter with one packet of soy sauce and sriracha, to taste. Mix with with a fork until it forms a thick sauce. In another bowl, add ramen noodles and cover with water. Microwave 3 minutes on high, or until noodles are tender. Drain out the water and mix in with the sauce. Tip: Top Ramen Oriental flavored noodles are vegan.
Potato Chips and French Onion Dip
All you need for this is a tub of Tofutti sour cream, a french onion dip mix packet, and your favorite plain potato chips. Just mix the dip packet into the sour cream and enjoy the perfect vegan sour cream and onion chips!
Use your choice of russet or sweet potato. Scrub it clean and poke holes into the potato with a fork several times to allow the air to escape as it cooks. Wrap in a damp paper towel and microwave 4 minutes on high. Turn the potato over and cook another 4 minutes. Unwrap it from the paper towel and slice it lengthwise. Add a spoonful of margarine and a sprinkle of salt and pepper, or a dollop of Tofutti sour cream and some salsa. Allow it to cool for several minutes before eating!
Instant Rice and Broccoli
Get a pack of instant rice and steam-in-the-bag broccoli. Prepare both in your microwave oven according to package directions. Fluff together in a bowl with a packet of soy sauce and enjoy.
Pick up some jumbo pretzels from the store. Prepare in the microwave according to package directions. If you’d like, use brown spicy mustard for dipping.
Tortilla Chips and Guac
In a bowl, mash 1/2 an avocado with a fork. Add a few drops of lime juice and sprinkle with Mexican seasoning, salt and pepper. If you’d like, add fresh diced tomato. Enjoy with tortilla chips.
Italian Veggie Sausage
Slice a veggie Italian sausage and put it into a bowl. Cover with pre-made marinara sauce. Optionally sprinkle with nutritional yeast. Microwave for one minute on high.
Prepare a packet of instant rice according to package instructions. Shred a sheet or two of store bought nori, diced avocado, and finely sliced cucumber. Fluff it all together in a bowl and enjoy.
