A few months ago, my wife of 57 years issued me a challenge; actually it was more of an ultimatum. She said: “If you want to continue to have dinner on Wednesdays, you need to start cooking it. I’m taking that evening off.”
Well, since I’ve always had some interest in trying new things, and since I wasn’t particularly interested in fasting every Wednesday, I took her up on it. I immediately began to look for interesting recipes on-line; my daughter, when she got word of it, even bought me my own cook book: Martha Day’s “1000 recipes”, a delightful collection of dishes from soups to desserts and everything in between. I only hope 1,000 will be enough.
Between the internet and the cook book, I was able to find a few dishes I thought I could handle. In some cases I had to apply my math skills, since the recipes were for six servings and there are only two of us. I either had to cut them down, or expect to have a ton of leftovers.
Each week, when grocery-shopping day rolls around, I add my own list to my wife’s. It’s been fun coming up with challenges to prepare a meal that’s not just a relief for her but something special as well. With only a couple of minor slips, the results have been good. And, since she wants to continue to eat, she’s been very supportive.
Among my experiments, here are a few of the entrees I’ve tried, with some success:
- Chicken Schnitzel
- Chicken Stroganoff
- Apricot Chicken
- Lemongrass Mango Louisiana Shrimp with Vermicelli Rice Noodles
- Baked Salmon with Avocado Mango Salsa
Along with the special main dishes, I’ve tackled some interesting sides, as well:
- Asparagus Risotto
- Broccoli with Creamy Parmesan Sauce
- Hot German Potato Salad
- Swiss Cheese Baked Spaetzel
Having crossed that hurdle, and tripping over it only a couple of times, we’ve now added Sunday brunch to my culinary schedule. I’ve even ventured out in that department, from French Toast to such specialties as:
- Bacon and Mushroom Crepes
- Fluffy Omelet
I guess it’s time I bring this story to an end because I’m sure by now you are probably getting pretty hungry. And, besides, it’s Wednesday; I have some prep work I have to do.
