Ah, Memorial Day is just around the corner. This time of year is one of my favorites! Warm temperatures, beaches are opening, and bar-b-q grills are being dusted off and heated up. Growing up in Florida Memorial Day meant a time to get everyone together in the backyard grill up some chicken, serve some pasta salad, and jump in the pool! Now that it is almost that time of year again I want to share my three favorite recipes for a classic down home BBQ!
This is always a favorite. My dad would make this and everyone would come running! I remember one year he even grilled this outside, in the rain during a summer celebration!
- One whole cut up fryer chicken
- Bottle of ketchup
- Spices (onion powder, garlic powder, salt, pepper)
- BBQ Grill
At least one hour before unpackage the chicken, in some sort of bowl or container liberally spice the chicken with onion powder, garlic powder, salt and pepper to taste. Then, cover with ketchup. I prefer a thick coating of ketchup.
To start place chicken skin side up on the grill and cook for about 15-20 minutes. Then, flip the chicken skin side down cook until done (roughly another 15 minutes or so). Turning the chicken allows the skin coated with ketchup and spices to caramelize and really finishes off the chicken. Once finished move to a platter and serve!
This is one that is budget friendly and makes enough to feed a crowd! Classic flavors with things most everyone loves!
- One package of spaghetti (I prefer angel hair)
- One bottle (250mL) of Italian Dressing
- One tomato, diced
- One cucumber, diced
- One onion, diced
- Paring knife
- Cutting board
- Large Storage container or serving bowl
Cook pasta according to package directions. Once the pasta is done drain. Add to storage container or serving bowl and add the bottle of Italian dressing. (This can be modified to your taste. I prefer a lot of dressing so I use almost an entire bottle.) Place in the fridge and let cook for about 3 hours. One hour before serving, using cutting board and paring knife carefully dice the cucumber, tomato, and onion. Add to the serving container. Serve and enjoy!
This was one of the first things I learned to bake. Super simple ingredients and instructions, but they pack a classic flavor!
- One box of vanilla cake mix
- ½ cup of butter, melted & cooled (plus a little extra for greasing the pan)
- 1 egg
- 1 cup of semi-sweet chocolate chips
- Mixing bowl
- Mixing spoon
- Pizza pan
Preheat the oven to 350 degrees Fahrenheit. Grease the pizza pan and set aside. In a mixing bowl combine the cake mix, melted and slightly cooled butter, and egg. Mix together until combined. Put the dough on the pizza pan and spread out. Sprinkle the chocolate chips on top and press into the dough. Bake 15-20 minutes or until lightly golden on top.
