These three dessert recipes taste great and are gluten-free. Here’s how to make three scrumptious desserts that are gluten-free.
1. Old-Fashioned Peanut Butter Cookies.
I’m always finding new ways to make peanut butter cookies. After a cooking disaster where I accidentally baked with rancid shortening, I had to modify my recipe to not use any shortening. Now with this recipe flour is being eliminated to make it gluten-free. Believe it or not these flour-less cookies are actually quite tasty.
For this recipe you’ll need to use an electric mixer because mixing it with hand will not make the batter fluffy enough. For ingredients you’ll need 2 cups of creamy peanut butter, 1 1/2 cups of granulated sugar, 1/2 cup of packed light brown sugar, 2 large eggs, 2 teaspoons of baking soda, 2 teaspoons of vanilla extract, and 1/2 teaspoon of salt.
First preheat the oven to 350 degrees F. Combine the peanut butter and sugars together in a mixing bowl. Use an electric hand mixer, or table-top electric mixer, on medium setting to mix these together for 3 minutes or until the mixture is fluffy. Now bring the mixer down to low and add the remaining ingredients. Continue mixing until all of the ingredients are well blended. Now roll the doll into balls to the desired size cookies that you want. Place the dough balls onto a cookie sheet and give a 2 inch space between each cookie. Smash down the cookies half way with a fork to make a criss-cross pattern. Cook the cookies for 10 minutes in the oven. These cookies will turn out flatter than cookies that use flour so make sure that you make the dough extra fluffy when using the mixer.
2. Fruit Parfait.
I love making and eating fruit parfaits. The great thing about them is they are very easy to make gluten-free. For this recipe you’ll need some fresh fruit and nice glasses to serve and display all of the different layers.
For ingredients you’ll need 1 cup of cut-up bite sized strawberries, 1 cup of blueberries, 1 cup of raspberries, 2 tablespoons of sugar, 1 tablespoon of lemon juice, and 1 pint of vanilla ice cream. You may choose to use more or less of the ice cream and fruits but these measurements will make around 4 parfaits.
To make the parfaits simply combine all of the ingredients except the ice cream into a mixing bowl. Now take a glass and cover the bottom of the glass with the fruit mixture. Next add a layer of ice cream that covers the bottom layer of fruit. Repeat the steps to make a couple layers. Try to make the top layer be a layer of the fruit mixture. Do this all again with the other glasses. Some people add granola to the top of parfaits but be careful with that since most oats contain gluten.
3. Sugared Tomatoes.
This is probably one of the most easiest “dessert” recipes out there since it only calls for two ingredients. This has been made at family events at my house and it’s quite shocking to taste these at first. They are quite sweet and tasty and give off a different taste you would expect from a tomato.
For this recipe all you’ll need are beefsteak tomatoes and granulated sugar. Simply cut thick slices of beefsteak tomatoes and add them to a mixing bowl. Add 1 tablespoon of sugar per tomato to the bowl. Carefully stir the tomatoes and sugar together without breaking the slices. Place the bowl of sugared tomatoes into the refrigerator for 20 minutes. After that take the bowl out and arrange the tomatoes onto a plate to be served and eaten.
