This is the continuation of my Taste of Home Annual Recipes where I share my choices for the best recipes in various categories for each year I have in my collection. I hope you find these recipes something you will try in your own kitchen and they are enjoyed by your family and friends as much as they are by mine .
These are my choices for the best main dish recipes.
Kids Love It Casserole – The kids will enjoy this twist on spaghetti, and I believe the grown ups will gobble it up as well. With the addition of spinach this recipe automatically goes to the top of my list. Using macaroni shells instead of spaghetti along with ground beef and spaghetti sauce you could almost eat this with just these three ingredients, but do check out the full recipe and give it a try. I always enjoy a heavy sprinkle of Parmesan cheese on top, shredded if I have it, but the powder will do in a pinch. I also like to add some red pepper flakes to give it a kick.
Slow-Cooker Enchiladas – I think this is an awesome way to cook your enchiladas and what a time saver. Layering your ingredients into the slow cooker, turning it on and then forget about it for 5-7 hours. When it’s time to eat, scoop out a spoonful or more and you can top it off with some sour cream, salsa and even avocado. Make it simple and serve the ready made refried beans from a can and you can buy ready made Spanish rice as well.
Garden Lasagna – My son is a vegetarian and this is a great way to have lasagna so everyone can share the same meal. During the upcoming summer months you can use your freshly grown tomatoes and zucchini. I also love how cottage cheese has been incorporated into the recipe. I must admit it becomes a bit of an issue with the mushrooms because my daughter will not eat them, but I make one half with and one half without and everyone is happy.
Saucy Bratwurst Supper – I do love my sausages as does my husband and I was happy to find this recipe and ready to give it a try. There are only a few other ingredients than the spices, but you end up with a meaty main dish. I personally love adding sour kraut to sausage recipes and it really works with this one, especially with the caraway seeds that are already included.
