Why not switch things up during the warmer weather with a summer salad recipe? I have listed five recipes that I believe to be a delicious choice for you and they include Northwest salmon, Feta Chicken Salad, Cobb Salad with Chili-Lime Dressing, Crab Pasta Salad and Sirloin Cesar Salad. Dig into one of these fresh dinner salads, a great way to lighten up your dinner meal.
Northwest Salmon Salad – If you enjoy salmon, this is a great recipe where you can use these Northwest ingredients, fresh salmon, blueberries and hazelnuts, all of this in one recipe. The salmon is complemented by a sour cream dressing and there is only one way to describe it, scrumptious. Blueberries are not the only fruit in this salad, it also includes peaches along with red onion, fresh snipped dill, which always goes great with salmon, and some cucumber and a variety of seasonings.
Feta Chicken Salad – This salad is rated healthy, quick and includes the diabetic exchange information. This recipe is not a salad in the traditional sense, but I would definitely serve it up on top of a nice bed of lettuce and you can even drizzle some of your favorite salad dressing over it. The actual chicken salad consists of shredded chicken, cherry tomatoes, red onion, cucumber and yellow peppers which are mixed up with some Greek seasoning the usual salt and pepper with crumbled feta sprinkled on top. This would be delicious on the bed of mixed greens with some ranch dressing drizzled on it.
Cobb Salad with Chili-Lome Dressing – I love a good Cobb salad, they are such a hearty salad with so many delicious ingredients and are usually big enough to take some home for later. This recipe is a bit different and it will spice things up for you with the hot sauce that is included. No worries, once you feel the heat you can cool things down with the avocado. Served with a chili-lime dressing it is a perfect dinner salad topped of with a sprinkle of cilantro.
Favorite Crab Pasta Salad – Whether you make this salad for dinner, a picnic or barbecue it is sure to be a hit so make sure that you make plenty. So easy to make by combining some pasta shells with creamy coleslaw, mayonnaise, some onion and of course the crab meat. The recipe calls for imitation crab, but you can use the real deal if you prefer, it may cost a bit more but definitely worth it in my opinion. I knew a lady who made this recipe for a party that she was having and it caught on really fast and nothing was left but the bottom of the bowl.
Sirloin Cesar Salad – This salad is so amazing looking I am hungry just looking at the picture, it is absolutely a meal in itself. The dressing is a wonderful mixture of bottled Caesar salad dressing with some Dijon mustard and lemon juice, wow! The steak is listed as a top sirloin but you can use any steak that you like, pile this on top of some torn romaine lettuce with chopped tomatoes and drizzle on that wonderful dressing. This is all served with some French bread slices that are toasted with some of the salad dressing spread on it. This is such a great hearty salad that will fill up even the hungriest of people.
