Not exactly what the doctor ordered, but it’s a way to get an extra serving of fruit in your daily diet while cooling down on a hot summer’s day. These recipes for summer cooler drinks are non-alcoholic and appropriate for all ages and best of all they each contain a serving of fresh or frozen fruit.
Icy Lemonade Cooler
Homemade lemonade is a cooling summertime drink, but you can take it up a notch and make it even more cooling with a couple of additives. In a large pitcher, mix 10 cups of cold lemonade with 5 cups of lemon sherbet. Stir gently to combine and add club soda for fizz, if desired.
Peachy Orange Cooler
Purée 5 cups of fresh or frozen peaches in a blender. Our into a large pitcher and stir in 2 – 6 ounce cans of frozen orange juice concentrate. Add 4 juice cans of water and half a cup of sugar, Stir until sugar is dissolved. Add 2 ½ cups of cold ginger ale and stir to combine. Pour in chilled glass and garnish with a fresh orange slice.
Orange Push-Up Cooler
Mix 6 cups of chilled orange juice, 5 cups of cold club soda and 2 ½ cups of milk in a large pitcher. Pour cooler into tall glasses, leaving 2 inches of head space, then place a scoop of orange sherbet on top.
Puree 1 cantaloupe that has been peeled, seeded and bed in a blender. Add 1 – 16 ounce can of crushed pineapple in heavy syrup and pulse to combine. Place ice or frozen cantaloupe cubes in tall glasses and pour melon-pineapple into glass, leaving top 1/3 of glass empty. Finish filling glass with club soda, stir gently to combine.
Mix 3 cups each of apricot nectar and pineapple juice in a large pitcher. Stir in 2/3 cup of fresh squeezed lemon juice. Chill for at least 1 hour. Just before serving, finish filling the pitcher with ginger ale, stir to combine and pour over frozen honey dew melon cubes or frozen grapes placed inside a tall glass.
Fruity Ice Tea Cooler
Brew up your favorite sweet ice tea mix and chill it. When the brew is cold and ready to serve, stir in 1 ½ cups of cold cranberry juice cocktail, 1/3 cup of cold orange juice and 3 tablespoons of fresh lemon juice.
