Spring is here and we are excited about enjoying the outdoors again. Bring your family and friends together by grilling yummy, fresh foods for them. Here are some of the Spring foods you can grill next time you have company:
Grilled chicken, steak and salmon
Prepare your chicken with a little olive oil, salt and rosemary. For a faster cooking time slice the chicken breast in half. You may add apricot sauce on top when it’s done for a delicate taste of Spring.
Marinate the steak before grilling to infuse your favorite flavor. This will also tenderize it and make it softer and easier to consume.
Grill the salmon coated in a touch of olive oil. This will keep it from sticking to the grill. Add a small pat of butter, dill, freshly squeezed lemon, salt and pepper to taste.
Grill fresh asparagus spears quickly on high heat. Add olive oil, salt and pepper to taste. Top with sliced almonds and Parmesan cheese. Asparagus is a great side for the grilled salmon and also a favorite veggie during Spring.
Grilled new potatoes
Wash potatoes thoroughly and slice them into quarters. Lay them unto a sheet of tinfoil and sprinkle salt, pepper and butter. Grill them until they are almost done and then add crushed garlic on top and finish grilling. Adding garlic toward the end of cooking gives it a great flavor and keeps it from turning bitter. When done, add fresh parsley on top. The grilled potatoes are a great side to steak and chicken.
Grilled bell peppers
Bell peppers are great for grilling. Simply place them on the grill and turn them on the other sides as needed. When they are done, slice them open to remove the seeds and prepare to put them in a bowl. Add olive oil and a little vinegar for flavor. They are easy to prepare and you can serve them as a side to steak and chicken. For more color choose the yellow and red peppers.
Spinach salad and other veggies
Prepare a simple spinach salad to go with your other dishes. Add fresh cucumbers, cherry tomatoes, oil and salt to taste. Other vegetables you could use for your Spring meals are radishes, peas, green beans, carrots, etc.
Finish your meal with fresh strawberries dipped in whipped cream. For a more intricate fruit desert put vanilla ice cream in a bowl, add sliced strawberries, blueberries and roasted almonds on top.
