Mother’s Day is upon us and there is nothing better than a good home-prepared brunch to spend time with and celebrate our mamas. There is one drawback though; is your mom a discerning and critical mom or will she love anything you make or even perhaps lie and say that she loves it?
There are simple recipes that will increase even the pickiest of mommies on Mother’s Day. Just don’t forget the flowers and a very sentimental card to make her day complete.
Spicy Shrimp Spread
This is an easy but very tasty recipe to spread on either water crackers or baguette slices. Recipe: two cans of shrimp (or half a pound of chopped boiled shrimp), two 8 oz. plain cheese (room temperature), four Tbs. mayo, two Tbs. ketchup, two Tsp. Dijon mustard, four Tbs. minced white onion, dash of salt, garlic powder and pepper, hot sauce to taste, and a half cup of finely diced seeded cucumber. Mix together all ingredients except the shrimp, onion and cucumber; add the chopped ingredients and serve in a bowl placed upon a plate with your desired accompaniment. It is yummier than it sounds.
Spinach Salad with Grapefruit Vinaigrette
Baby spinach leaves and a different citrus make this dish amazingly good. Recipe: batch of baby spinach leaves (washed), diced Roma tomatoes, sliced red onion, chopped Spanish olives ( capers would be a great substitute), and crumbled feta cheese. For the dressing: mix two halves of squeezed grapefruit, salt, pepper, and minced garlic. Whisk in extra-virgin olive oil and Dijon mustard. Pour over prepared salad. This is my own recipe and it’s fantastically delicious.
Melon and Prosciutto Wraps
This fun little appetizer is so easy and refreshing for Mother’s Day. After cleaning and deseeding a cantaloupe or honey-dew melon, scoop out balls or slice into cubes. Wrap prosciutto around the piece and secure with a toothpick. I’m not a fan of wooden toothpicks so something similar such as a plastic pick would be more appropriate, safer, and more attractive.
Mamas need a great drink to sip on over brunch and sangria is perfect. Grab a big glass pitcher and throw in some fresh- sliced limes, lemons, and various other fruits. Pour sparkling water and a nice bottle of rose wine into the mix; stir in some sugar and brandy and there you have it…a lovely drink to accompany any brunch.
