You’re about to learn what the secrets of really great barbecue are all about, just in time for Memorial Day! Here we have three great recipes for pork ribs, chicken wings, and steak kebabs. Make sure to look for the special instructions for preparing the ribs. The sauces you use are always up to you, however there are a number of selections listed recommended just for you. There are many different sauces on the market, but the ones here are loved by millions of people.
You will need:
- Two racks of pork ribs (feeds 3 people)
- A dozen chicken wings per person
- 6 ounces of top sirloin steak per person
- Green, red and yellow peppers
- Red onions
- Dinosaur BBQ Sauce
- Country Sweet Sauce
- A-1 Sauce
- Marie’s Blue Cheese Dressing
- Potato chips
- Macaroni salad
- Potato salad
- Baked beans
- Beverages of your choice
When you are preparing the chicken wings and steak, take the whole wings (and also cut the steak into 1 inch square cubes) and place in marinade trays and marinade for 12 hrs. You will do this at the same time as the ribs, but you have to do some rib prep first (described below). Placing the meat into marinade trays to marinate the night before Memorial Day is ideal. Use enough sauce to cover meat completely when marinading.
When preparing the ribs, you’ll want to first cut the ribs into sections. The rule of thumb is to take a rack of ribs and cut it into three parts. Check how many people you are going to be serving and generally you will be giving people two of the sections per person (i.e. If you are feeding 3 people you will need two racks of ribs, also, you will need a dozen wings per person and 6 ounces of sirloin steak cut into 1 inch square cubes (along with pepper, mushroom, and onion pieces). People may eat less, but whatever they don’t eat, you can later!
After you have cut the ribs into sections, take a large pot and fill it with water and bring to a boil. When the water is boiling, add the rib sections to the boiling water and cook for 10 minutes. This will prevent under cooking when you grill (a problem with pork). After removing the ribs and draining them, add 1/4 cup of salt to 2 gallons of room temperature water in a large pot and stir for 1 minute. Add the ribs to the water, add water to cover meat completely, and then refrigerate for 12 hours. Do this first thing in the morning on the day before Memorial Day to dovetail into the time frame to marinate in the evening (along with chicken wings and steak).
After 12 hours of soaking in the saltwater solution, remove the ribs and drain them. It is time to get out the marinade trays and marinate the ribs for 12 hours in Dinosaur BBQ Sauce (you should be getting the chicken wings and steak kebabs’ marinade on at this time too). This process will take slightly over 24 hours to do for the ribs total, but you will have the moistest, tastiest ribs you ever had in your life as a result. Some may argue this point, but these methods never fail.
When making steak kebabs, use 1 inch square steak cubes and alternate with pieces of green, red, and yellow pepper, mushrooms, and red onion pieces. Place them on skewers in rows. When grilling, use a baster to baste ribs, chicken wings, and steak kebabs with Dinosaur BBQ Sauce. Use liberally, don’t be afraid to use a lot, and do so at least 3-4 times when actually food is actually on the grill. Grill until all food is completely cooked and well done. When done grilling, place the cooked food on separate dishes to keep flavor without mixing the meats together.
Serve the ribs with Dinosaur BBQ Sauce for dipping, cover chicken wings with Country Sweet Sauce and use Marie’s Blue Cheese Dressing for dipping, and offer the steak kebabs with A-1 Steak Sauce for dipping. Using these recipes is a far cry from hot dogs and hamburgers, and will really make this Memorial Day a memorable one.
