Whether you’re up late studying for finals or trying to silence a growling stomach, snacking after dark can happen to the best of us. But sometimes a box of crackers or a bag of chips just isn’t enough. If you’re looking for a more exciting late-night menu, check out these easy recipes you can create in a flash.
Making your own nachos doesn’t have to be complicated. Start with a bag of your favorite tortilla chips, like Tostitos. Place a layer of chips on a microwave safe plate, and spread with a thin layer of salsa. Sprinkle shredded cheddar cheese over this layer. Add another layer of chips (stack carefully, it’s like building a Snack Pyramid!). Repeat the process of salsa and cheese. Microwave on high for small intervals- try starting at 20 seconds- until cheese is melted and salsa is warm. Eat immediately.
Short Cut S’mores
S’mores don’t have to be made over an open flame. For a quick sweet fix, place a marshmallow and a small piece of chocolate between two graham crackers. Microwave for 10 seconds. The marshmallow will swell slightly, and that’s fine (and fun to watch!). After ten seconds, remove the s’more and press the top of the graham cracker down lightly. The chocolate won’t melt completely, but it should be soft enough for you to bite into, and give you the ‘smore flavor’ you’re looking for.
Okay, so this one isn’t really a recipe. But if you don’t have much in the pantry and you’re craving something sweet, one of my favorite go-to snacks is the cereal mash-up. Grab a bowl and add a little bit of every cereal you have. Eat with or without milk (I prefer it dry). Don’t have a variety of cereals to choose from? Try adding unusual things to the cereal mix–chocolate chips, nuts, raisins, even fruit (fruit works best with less-sugary cereals).
Creamy Salsa Dip
If you happen to have cream cheese in the fridge, you can make yourself an awesome evening dip in a matter of minutes. Take a softened block of 8oz cream cheese and mix with 1 cup of your favorite salsa. The cream cheese will not blend completely and you might see chunks. Be forewarned that this is not a very ‘pretty’ dip, but it sure tastes great. Dig in with your favorite tortilla chips or spread on crackers.
