Sweet and spicy food makes for a fine day at the grill. This recipe for Pineapple Jalapeno BBQ Sauce can really set off several grilled dishes. Who knows? This just may become a new family tradition for you and yours. To make this easy and delicious finishing sauce you will need:
- 2 cups of Honey BBQ sauce
- 1 cup of Pineapple Chunks (you can use crushed but I like being able to control the texture)
- 1 cup of sliced Jalapeno peppers
- ¼ cup of brown sugar
- ¼ cup of vegetable oil
Combine peppers and pineapple in food processor and give it a few pulses to get the chunks chopped and blended with the peppers while leaving it somewhat chunky. I prefer not to blend them to a paste because the texture is part of the attraction for me, but it is purely a matter of preference. In a medium-size bowl, combine the pepper/pineapple blend with the other ingredients until well mixed. Put in the refrigerator for a couple of hours before using to allow flavor-mingling. You can remove it from the refrigerator while you are grilling but wait to apply to the fully cooked meat until the last ten minutes. I like to move the meat to an indirect heat area of the grill and slather on the sauce. It will thicken up and present itself beautifully on the serving platter. This sauce goes perfectly on chicken breasts, blue cheese stuffed hamburgers (we call it the Lu-Ow! Burger), kabobs, ribs, and sausages. It is also delicious on grilled sweet peppers and onions.
