I woke up with a migraine headache again! I haven’t figured out what it is yet. It could be that I’ve slowed down on my caffeine intake. I used to drink coffee almost every day before work since I rise so early. I’ve been weaning myself off of it and only indulge a few times a week now. I slept like a rock though and that’s saying something since I usually toss and turn. Maybe it’s because there’s not really any caffeine in my system or refined sugar since being on the vegan diet. It could be that I haven’t had any heavy foods to digest (like on Easter Sunday night :).
My daughter was chipper when I picked her up from school yesterday. She confided that she was glad that we were doing the vegan thing because she felt that it would help her function better on her STAAR test this week. My son practically bounded into the car when I picked him up which is a welcome change to his detached, seemingly nonchalant everyday attitude. I had chalked it up to his teenage hormones all this time, but could it be at least partly due to his diet not normally containing an over-abundance of vitamins and nutrients? He was excited about vegan week and even asked if he could take a picture of my menu for the week and share it with his friends who were interested.
We had multigrain waffles with organic maple syrup and fresh cantaloupe for breakfast. Lunch consisted of a garden salad with romaine hearts, spinach, tomatoes, cucumbers, pickles, pita chips, pecans, walnuts, dried cranberries, almonds, a vinaigrette dressing and apple slices with almond butter on the side. Dinner will be a snap because I am stuffing the sweet bell peppers with the leftover Veggie and Bean Soup we had last night for dinner. We’ll have steamed edamame on the side with either garlic-herb pita chips or multigrain crackers and sliced strawberries I macerated with agave nectar for dessert. I think I’m getting the hang of this now.
I saved this point for last because I am highly embarrassed. The downer is that I am full of gas! I do realize that I am ingesting massive quantities of fiber that my body is not accustomed to processing in this quantity. I’m not sure if Gas-X is vegan, but I totally had to take some because I was literally in pain from the gas! I think one of my co-workers must have thought that I was pregnant because I went to the restroom so many times at work today. I shudder to think what the car ride home from picking up the children will be like. Maybe I need to bring a gas-mask (pun intended)…
Again, the good far outweighs the bad. My children are functioning better all around. Our vegan trial is even inciting my son’s peers to make better eating choices. My sleep is greatly improved. I’m sure once my body gets accustomed to the diet my current gas situation will literally be a blast from the past! :)
