In an effort to remove wheat from my diet, but still enjoy fun and tasty food like pizza, I have had to put on my creative hat. I love nothing better on Friday night than a cold beer and pizza. I now have a healthy and tasty pizza plan that you will love.
Now, since I am eating healthy, I love having a cold gluten free beer or cider and a yummy portobello pizza. Both hit the spot, are healthy, and satisfy my Friday night fix. Follow my easy directions to make your own portabello pizza.
Carol’s Healthy Portabello Pizza
Preheat the oven to 375˚
With tin foil make portabello-sized bowls
Wash the mushrooms and remove the stem
Put the mushrooms into the boats upside down
I usually cook two for each person
Inside the upside down cap place (in this order)
Italian sausage, hamburger, or pepperoni
Top with a good quality mozzarella or Parmesan
Bake until the cheese melts and ingredients are warmed (about fifteen minutes)
Remove and pop the cap on your beer
Enjoy my portabello pizzas!
Feel free to change up any or all of the ingredients. You can also try different cheeses or even a white sauce and a veggie only pizza. Experiment. The mushroom will not crisp up like crust, but it is tasty and makes a great receptacle for the pizza ingredients. Prep and cook time totals average about thirty minutes. Eating healthy does not mean giving up your favorite food and drinks. Enjoy!
