Many health experts believe lunch should be the biggest meal of the day, so why not make it a healthy, protein packed meal. The problem is if you are anything like me, you don’t have a whole lot of prep time to get that meal ready to go with you to work. This is why just throwing a bunch of ingredients into a 100% whole wheat tortilla wrap is a quick and efficient way to make your lunch every day.
The Tuna and egg white wrap technically takes longer than 10 minutes to make because it takes that long just to boil an egg; however, you can do other things while you wait for the egg to firm up. In my wrap, I prefer Chicken of the Sea Chunk White Tuna in Water because it is much lower in sodium that other brands. Which is a good thing, because while egg whites are very healthy, but they do add a little bit of sodium themselves. I quickly drain the one can of tuna and just add a teaspoon of mayonnaise and mix it in well.
After the eggs boil and cool, I cut out the yucky, fatty piece of yoke and throw it away! I chop up the egg white and throw it in. After that, it is really up to you with what else you add to the wrap. I like throwing in some spinach, diced tomatoes and shredded cheese. All of these things add a lot of flavor but also a lot of healthy nutrients that everybody needs from their midday meal. Others wish to have a thicker wrap (like Pita bread), but too much carbs may make you sluggish after lunch, and most bosses don’t appreciate it when their employees fall asleep for the last 3 hours of their shift.
As a side, I like to bake some Kale chips covered in salt and olive oil for 10 minutes at about 400 degrees. These kale chips are the perfect healthy snack to complete this amazingly fresh and healthy lunch that is packed with protein and will keep you going until the clock strikes 5.
