Here are a few gluten free recipes I think you will enjoy whether you are allergic or not. Beets are something I usually juice so having them in a brownie recipe is a great new way to include them in my diet.
- 1/2 C gluten free flour
- 1/4 C cocoa powder
- 1/3 C beet puree
- 1/3 C sugar
- 3 eggs
- 1/4 C coconut oil, melted & cooled
- 1 tsp baking powder
- 1-1/2 tsp vanilla
Your oven should be preheated to 350 degrees, and your 9X9 pan sprayed with non-stick spray.
1. In a large bowl, mix the dry ingredients together with a wire whisk.
2. Add in the eggs, coconut oil, vanilla and beet puree, mix until smooth.
3. Pour the batter into the pan and bake at 350 degrees for about 20 minutes. Use the toothpick test to ensure it is done.
4. This is best served warm and ewey gooey.
Gluten Free Almond Flour Muffins
Almond Flour Muffins
- 4 oz balanced almond flour
- 2 large eggs
- 1 T honey
- 1/4 tsp baking soda
- 1/2 tsp apple cider vinegar
Have your oven preheated to 350 degrees, and your muffin pan sprayed with non-stick spray or muffin papers. (I spray the papers as well)
In a bowl, combine the flour and baking soda
In another bowl, combine the eggs, honey and vinegar.
Add the dry ingredients to the wet and mix until smooth
Scoop the batter into the muffin pan evenly and bake for 15 minutes or the toothpick comes out clean.
Let them cool in the pan for 30 minutes
- 1/2 cup butter, softened
- 1/2 cup sugar
- 2/3 brown rice flour
- 1/3 cup potato starch
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup light brown sugar
- 2 tablespoons brown rice flour
- 1 cup shredded coconut
Preheat your oven to 350 degrees and have your 8×8 pan, buttered or sprayed with non-stick spray.
Mix the crust ingredients together and press them into the bottom of the prepared pan.
Bake for 10 minutes, remove and let cool while preparing the filling.
Mix the filling ingredients together and pour over the crust.
Bake 20 minutes more
Let cool completely before slicing.
