- In a vessel mix the dark chocolate and water and bring it to boil,Refrigerate for 10min.
- Dissolve the soy lecithin into the mixture with a hand blender or an egg beater and produce a good quantity of foam.
- Spoon the foam into another bowl and mix the peparation again if necessary to get the maximum amount of foam in the freezer for 1hour. The formation of foam gives more of the flavour than the content.
