With the summer heat it seems that cooking or eating a heavy, hot meal is more than you want to take on. Why not enjoy a delicious sandwich for dinner, add in a salad of some kind, maybe some chips; fresh fruit and you have yourself a tasty dinner with less effort. Sit down, relax and enjoy the rest of your evening, maybe the hubby or kids will even do the dishes for you!
Here are 5 great sandwich recipes from Taste of Home I thought you might enjoy cooking up in your kitchen.
Easy Salsa Sloppy Joes – This recipe was created in the absence of sloppy joe sauce and taste good enough that you may never use canned prepared sauce again. Really simple to make with only five ingredients you can whip this up any time your in a hurry or need a tasty sandwich at the last minute. Ground turkey can be used which makes this a leaner choice and is mixed with salsa, tomato soup, brown sugar and some hamburger buns. I like using a larger potato bun, they have a great flavor and are more meal size for heartier eaters. You can make it spicy or mild depending on your heat tolerance by using a salsa rated at the level you want. You can serve these up with some tater-tots or french fries which is what my mom would serve us along with some green beans or other vegetable to round out the meal.
Monterey Artichoke Panini – Panini’s sure became popular in a hurry and I was one of those people who ran out and got myself a Panini grill. I love it and not only do I grill my sandwiches, but I also grill my chicken on it and it only takes about 10-15 minutes for even the largest breast to get done. This recipe for a Monterey Artichoke Panini is a wonderful combination which also includes tomatoes and spinach, which make it so delicious and appealing to the eye. You can use the marinated artichokes if you already have them on hand and another thing you might consider adding is some Italian dressing to kick it up a notch. Since you already have your grill out, why not grill up some fresh vegetables like zucchini or yellow crooked neck squash and drizzle some of that Italian dressing on them as well.
Italian Chicken Wraps – This recipe us quick and easy to make, healthy and is actually a contest winning recipe. The ingredients include frozen stir-fry vegetables, ready-to-use grilled chicken breast strips, fat-free Italian salad dressing, shredded Parmesan cheese and flour tortillas. If you want to save on some carbs you can use the low carb tortillas that can be found at most supermarkets. A really great idea I read at the website was that a Brownie troop made these for their moms, it was for a special activity and these 7 and 8 year old girls had no problem making these up. Eat them on the go, pack them up for lunch, these wraps are really an eat anywhere meal.
Sausage & Spinach Calzones – I have to say that this was my favorite of all of these delicious sandwich recipes because it included spinach. They include one of my favorites Johnsonville sausages, the recipe calls for mild Italian, but once in a while I like to spice it up a bit and use the spicy ones. The crust doesn’t get any easier than using refrigerated pizza crust, shred some mozzarella add some baby spinach and ricotta cheese and a dash or so of salt and pepper and you’re all set. This Calzones will freeze up very nicely just make sure that they cool down all the way before you put them into the freezer. You can use turkey sausage if you want to save on the fat as well as fat free ricotta. My husband loves some red sauce served with his Calzone and you can simply serve some ready made marinera or spaghetti sauce on the side.
Chicken Pesto Sandwiches – I really like including pesto in my recipes whenever I can, it offers such a unique flavor that may leave people wondering what is in your recipe. These chicken pesto sandwiches are beautiful to look at and even better to eat. Assembled on thick slices of Italian bread that is toasted it only gets better with the addition of roasted sweet red peppers, mozzarella cheese and the pesto along with a few other ingredients. If you have a cast iron pan, these sandwiches will grill up fantastic in them. I like substituting Swiss cheese sometimes just to switch up the flavor, Swiss cheese is one of my favorites.
