Memorial Day weekend is right around the corner and one great way to celebrate the holiday is to invite friends and family over for a barbecue. Below are five easy and delicious appetizers you can serve to get the party started. These are wonderful choices because they are quick to make, affordable and each recipe only involves a few ingredients.
1. Buffalo Chicken Dip with Chips
-8 oz cream cheese
-2 cans of chicken
-1/2 c ranch dressing
-1/4-1/2c hot sauce
-8 oz shredded cheese
Combine cream cheese, cans of chicken, ranch dressing, hot sauce to taste and shredded cheese. Stir until blended and spread evenly in baking dish. Bake in preheated oven at 350 degrees for 20 minutes, or until heated throughout. Serve warm with chips.
2. Memorial Day Trifle
– 1 pound of strawberries and blueberries
-One container of cool whip
-Angel food cake
Slice strawberries and angel food cake into bite size pieces. Layer strawberries, blueberries and angel food cake in a trifle dish, with a moderate layer of cool whip in between each layer. Repeat in same order until trifle dish is full. Top with cool whip and remaining fruit.
3. Baked Brie Cheese
– 8oz wheel brie cheese
-Can of crescent rolls
-Topping: fruit, orange marmalade, honey and walnuts
Unwrap 8oz wheel of brie cheese and peel or scrape the rind off. On a greased cookie sheet, take four unrolled crescent rolls and form a square, placing the brie on top of square. Place the remaining four rolled out crescent rolls on top of the brie cheese. Using your fingers seal the edges together so the cheese is completely encased in crescent rolls. Bake at 350 degrees for twenty minutes, or until cheese is heated throughout. Top with fruit, orange marmalade or honey and walnuts.
4. Deviled Eggs
-One dozen hard boiled eggs
Cut eggs in half length wise, scooping out the yolk. Place empty egg whites on a platter, while putting the egg yolks in a separate bowl. In this bowl, combine yolks with mayonnaise, mustard, and relish to taste. Spoon into empty egg whites and sprinkle with paprika.
5. Macaroni salad
– One 16oz box elbow macaroni, cooked
-Your choice of meats: Cubed ham, chicken breast
-Your choice of cheeses, shredded or cubed
-Your choice of fresh vegetables: green peppers, onions, cherry tomatoes, broccoli, etc
Mix macaroni with a variety of meats, cheeses and vegetables. Add Italian dressing to taste.
