If you’re looking for a low-key idea to celebrate Father’s Day, consider a simple brunch in bed for dad. Get the kids involved by having them decorate placemats and coasters. If you want to make it family affair, plan a pajama brunch on the couch and put in your favorite family movie to enjoy together.
Try this easy Father’s Day brunch menu that dad will love.
Meaty egg bake
Start by browning ½ pound of spicy or sweet sausage with ½ a yellow onion. Cut a ½ loaf of crusty french bread into 1-inch cubes and bake at 400 for 10 minutes. Whisk 12 eggs with 1 cup of milk until pale yellow. Add the cooled croutons and meat mixture. Fold in 1 cup of shredded cheddar cheese and 4 chopped scallions. In a buttered baking dish pour the egg and meat mixture. Bake at 350 for 30-40 minutes or until the middle is set.
Monkey bread muffins
Using two packages of country style instant biscuit dough, pull biscuit dough apart into 1-2-inch strips. Dip each in melted butter and cinnamon sugar mix. Form a small ball of dough with the strips of dough and place in each muffin cup. Mix remaining butter and sugar mixture and pour over each muffin cup. Bake according to package directions.
Crispy breakfast potatoes
Chop 3-4 russet potatoes into 1-inch pieces. Drizzle olive oil over top and generously season with salt and pepper. Bake at 450 for 25 minutes flipping once halfway through. Potatoes should be brown and crispy.
Basil fruit salad
Chop your favorite fruits and add to a large serving bowl. I love cantaloupe, apple, orange segments, pear and melon. Thinly slice basil leaves and sprinkle over top. Squeeze any extra fresh orange juice over the fruit to make a simple dressing.
