Making dinner doesn’t have to be hard or time consuming. This is a super easy, microwave friendly, very delicious, and healthy recipe for teriyaki beef and broccoli.
1 top round London broil 1 inch thick steak (approx. 1 ¼ lbs)
12 oz can of ginger ale
10 oz package of frozen broccoli, thawed
5 oz can of water chestnuts, drained
½ cup teriyaki sauce
3 mince garlic cloves
2 sliced scallions
½ tsp red pepper flakes
1 tbsp cornstarch dissolved in 1 tbsp of water
Pour the teriyaki sauce, garlic, scallions, red pepper flakes, 2 tsp of the oil, and half of the ginger ale into a large ziplock bag and mix well.
Pour ½ of this mixture into a bowl and set aside.
Cut the steak into ¼ inch thick slices and put them in the ziplock bag and refrigerate 1 to 12 hours.
Put the remaining tsp of oil in a 2 quart microwaveable dish and microwave 30 seconds, until hot.
Take the steak out of the bag and put it in the 2 quart dish, throwing away the left over sauce from the bag.
Microwave the meat for 3 to 4, stirring every minute until the meat is brown at the edges and pink in the center.
Add the broccoli and chestnuts and microwave 1 to 2 minutes until the steak is slightly pink in the center.
Drain the remaining sauce from the meat mixture.
Stir in the sauce that you set aside into the 2 quart dish with the meat mixture and microwave 2 to 3 minutes, until hot.
Stir in the cornstarch-water mixture.
Microwave everything for 4 to 5 minutes, stirring each minute, until the sauce is hot and thickens.
Makes 6 servings.
