Sloppy Joes are classic dinner and lunch sandwiches that everyone loves. Here is an easy and healthy microwaveable Sloppy Joe that the whole family will want seconds of.
1 lb of extra lean ground beef
15 oz can of barbeque sloppy joe sauce
6 oz can of mushrooms, sliced, drained, and finely chopped
8 whole wheat hamburger buns
1 cup of onions, chopped
2 tsp of vegetable oil
2 garlic cloves, minced
1 tsp of chili powder
1 tsp of dried oregano
1/8 tsp pepper
Put the oil and onion in a 2 quart microwave safe dish and stir until onions are completely coated.
Microwave for 4 to 6 minutes until soft then add the beef, garlic, chili powder, oregano and pepper and microwave for another 4 to 6 minutes, stirring every 1.5 minutes until there is almost no pink in the meat.
Stir in the sloppy joe sauce and the mushrooms and microwave for 8 to 10 minutes until the sauce is hot and the mixture is thick enough to put mound on a bun.
Makes 8 servings.
