Instead of the PB&J or basic ham sandwich you eat for lunch, whip up this super quick and easy Reuben and mix up your mid-day meals.
12 oz can of corned beef, cut into 6 slices
½ 14 oz can of low sodium sauerkraut, well drained
½ cup low fat Thousand Island dressing
12 slices of rye bread, toasted
½ 8 oz package of sliced low fat Swiss cheese
Put the corned beef slices in one layer in a 2 quart microwave safe dish and top with the sauerkraut and cheese.
Cover tightly with plastic wrap and microwave for 1 to 2 minutes, until the cheese melts.
Spread the salad dressing on the toast and use a spatula to put one slice of corned beef on the toast.
Top with the other piece of toast and serve.
