Greek yogurt is becoming more and more popular among U.S. consumers and not just for breakfast. This super-thick, creamy strained yogurt comes in a variety of flavors now. For most brands, one serving has only around 100 calories, is lower in sugar than conventional yogurt cups and packs about 15-16 grams of protein. It’s not necessarily a meal replacement, but a healthy, tasty snack that will keep you satisfied in between meals.
Here are a some easy, delicious Greek yogurt meal and snack ideas.
Greek chicken with tzatziki yogurt sauce
Marinate one pound of chicken breasts or boneless, skinless chicken thighs in the following mixture: one teaspoon dried oregano, smoked paprika, salt, onion powder, garlic powder or two cloves fresh minced garlic, thyme and lemon zest. Add a pinch of red pepper flakes or black pepper. Pour ½ cup olive oil in spice mixture and marinate chicken for 1-2 hours. Grill until cooked through. On the side, serve a refreshing tzatziki sauce. Mix 16 ounces of plain, Greek yogurt with salt, pepper, dried or fresh dill and the juice of one lemon and its zest. Grate a seedless cucumber and squeeze out any extra juice. Mix into sauce. You can also serve olives, tomato salad and couscous to round out the meal.
Baked buffalo chicken dip with Greek yogurt
Mix three cups of pulled chicken (use a rotisserie chicken or leftover chicken breasts) with ½-1 cup of your favorite buffalo sauce and 8 ounces of full fat Greek yogurt. Mix in one cup of good cheddar cheese and pour everything into a buttered baking dish. Top with more cheese. Bake at 375 for 20 minutes or until top is browned and bubbly.
Roasted vegetables with curry yogurt sauce
Chop your favorite veggies into one-inch cubes. Bell peppers, onions, zucchini, potatoes, mushrooms and cherry tomatoes are all yummy choices. Roast at 400 degrees for 20-30 minutes until vegetables are caramelized. On the side, serve this easy curry yogurt sauce. Mix 16 ounces of Greek yogurt with 1-2 tablespoons of curry powder. Season with salt and pepper.
Chicken tacos with adobo yogurt sauce
Cook ground chicken with a can of tomatoes and one packet of taco seasoning. Pan fry fresh corn tortillas or flour, if desired. Chop and assemble your favorite taco toppings: fresh onion, cilantro, tomatoes, salsa, avocado, lettuce and cheese. To make the adobo yogurt sauce, mix 8 ounces of Greek yogurt with 2 tablespoons of adobo sauce (sauce from one can of chipotle peppers in adobo sauce. Squeeze half of a lime into the sauce and mix well before serving.
