Going gluten-free doesn’t mean an end to brunch. In the five plus years I’ve been gluten-free, I’ve mostly steered away from flour substitutes. Rather than think “How can I have pancakes?” I think “What will I have instead of pancakes?” I’ve gathered for you a few of my favorite brunch options. I bet you won’t even miss the danish.
Breakfast stratas are simple: dump it all together, pop it in the oven, go back to reading the newspaper until the timer beeps. After having a fabulous “hash” at one of Bobby Flay’s restaurants, I was inspired to make a simple version:
Sweet Potato and Chicken Strata
1/4 teaspoon salt
1c shredded cheese (I like Jack, but use what you have!)
1c cooked diced sweet potatoes
1c cooked diced chicken
1 Tbsp minced chipotle pepper
Begin by whisking together the eggs, cream, and salt. Pour them into a 9×13 pan. Add potatoes, chicken, and pepper and stir. Top with cheese, bake in a 350 degree oven for 30-40 min, until firm.
Instead of quiche, try frittata. This is my favorite way to clean out the fridge of all the leftovers. Here’s a basic recipe, feel free to add whatever you like (or need to use up).
½ tsp salt
¼ tsp black pepper
2 Tbsp butter
1 ½c cooked diced potatoes
½ t dried thyme
12 oz bag frozen spinach
1c shredded provolone cheese
Heat oven to 375. Mix together eggs, milk, salt, and pepper. In a 12 inch skillet, melt the butter. Add the potatoes and let them brown. Pour eggs over the potatoes. Add spinach, distributing it evenly. As the eggs start to set up on the edges, sprinkle the cheese on top. Transfer pan to oven, bake until firm, about 20 min.
I’d be an embarrassment to my Southern heritage if I didn’t give you a grits recipe. Grits make for great brunch food. A Bloody Mary and some cheese grits will cure any hangover.
Cheesy Grits with Poached Egg
1c corn grits
½ tsp salt
4 Tbsp cheddar cheese
Bring water and salt to a boil, slowly add grits, stirring. Cook on low for 5 minutes, stirring occasionally. Add cheese, cover, set aside.
Poach the eggs however you like. I recommend Alton Brown’s method. When they’re done, dish out the grits onto four plates and slide the egg on top. When the yolk breaks, it will mingle with the grits for buttery goodness.
Squeeze some fresh o.j. and enjoy!
