Breakfast can be a bit chaotic and more than stressful. If you prepare easy breakfast foods that the kids can simply pop in the microwave, you can get ready, feel assured the kids got a healthy and filling breakfast, and make mornings less stressful. Carol’s Breakfast Egg Muffins
Five eggs (you can easily substitute with egg beaters or a similar item)
¾ cup of milk (whole, skim, or low-fat work)
Salt and pepper to taste
Add cooked bacon, cooked sausage bits, mushrooms, chopped peppers, chopped onions, chopped tomatoes, sliced zucchini, squash coins, cooked ground beef, or cooked ham (you decide which items and how much)
Preparation and Cooking
Preheat the oven to 350˚. Mix up your egg muffins. Line a 12-unit muffin tin with fun cupcake liners. Fill the liners to the ¾ level. Cook your yummy baby omelets for 20 minutes. Portion the cooked delights, according to the size of your family, in plastic bags. Refrigerate your breakfast treats. Tell the kiddies to warm them on medium in the microwave for 15-20 seconds.
I have learned to cook ahead on the weekend for the upcoming week and that especially includes breakfast meals. Morning is no time to be unprepared for groggy and hungry children in a hurry. The kids can even take these egg muffins in the car and eat on the trip to school or weekend practice.
Experiment with different ingredients for different tastes. I always have several different types in the refrigerator. The egg muffins also freeze well for longer keeping. You and your kids will love the taste and the ease of this morning meal of egg muffins.
