Baked Chicken, Potatoes and Carrots
- 4 Chicken Thighs
- 2 Carrots
- 3 Potatoes
- salt and pepper to taste
- 3 tbsp olive oil
- 1 tbsp minced garlic
- Preheat oven to 375 degrees. Get a 9 by 13 pan and line with tin foil. Take chicken thighs and run under water to wash off, pat dry with paper towl. Wash off potatoes and carrots with scrubber and also pat dry with paper towel. Cut potatoes and carrots into smaller pieces, bite sized peices.
- Take chicken, potatoes, carrots and garlic and place in pan. Drizzle olive oil on top of everything and then mix up so everything gets coated. Add salt and pepper at this time to taste.
- Stick in oven for 1 hr and 20 minutes. Check chicken and potatoes, if tender, everything is cooked all the way. Serve and enjoy!
